Gluten-Free Cottage Cheese, Oats and Peanut Butter Pancake Recipe

You can let your kiddos eat pancakes for breakfast and still know that they have the right nutrients to get them through the day with this scrumptious gluten-free pancakes! Gluten-Free Cottage Cheese, Oats and Peanut Butter Pancake Recipe

These protein packed pancakes will fuel-up the whole family for a day full of activities... They'll love them and they don't need to know they are healthy!

Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese
  • 2 eggs
  • 1/4 cup Jif® Cinnamon Flavored Peanut Butter Spread
  • 1 tsp. vanilla extract
  • 2 tablespoons honey
  • 1 tsp. vegetable oil

Instructions
 

  • In the jar of a blender, add your oats,
  • Cottage cheese,
  • Eggs,
  • Peanut butter
  • Vanilla & honey.
  • Blend until a smooth batter forms.
  • Place your griddle over medium heat and let the griddle come up to temperature.
  • Pour some vegetable oil into the pan and then wipe with a paper towel. Keep the paper towel handy and wipe the pan after each pancake.
  • Next, pour your batter in the pan.
  • Let cook slowly for 2-3 minutes until the edge start to solidify the pancake bubbles.
  • Turn pancake and let cook for another 2-3 minutes.
  • Remove from pan and top with your favorite pancake toppings. We like more peanut butter topped with fruit and a little maple syrup.
