Cheddar Corn Chowder | Recipe

When a chill sneaks its way into the air, this is the first recipe that pops into my head.  This is my adaptation of Ina Garten's Cheddar Corn Chowder.  Her recipe is great, but I always have to tinker and make it fit more to my taste and lifestyle.

This chowder is thick, rich and really hits the spot on a cold day. The sweet corn pairs nicely with the bacon, potatoes and sharp cheddar cheese creating the perfect comfort food to share with family and friends.

It's a perfect starter or meal itself for a dinner party, potluck, or family gathering.  All you need is a couple of loaves of good crusty bread and you have a rich yet rustic dinner to share.

    This looks absolutely delicious & so simple!! Perfect for those nights where I don’t have a lot of time to prepare supper. It’s a great thing that my girls love soup!! My husband, not so much, but he’s big enough to fend for himself :P

    I don’t understand the addition of the water to the uncooked bacon. Why do this instead of just cooking the bacon? Just curious. The recipe looks delicious, though.

    I love Mimi's Corn Chowder soup, and have been looking for a great and easy recipe.

    One question: After removing bacon fat from the pot, do you keep the flavored water and cook the onions, etc. in that or do you cook the onions, etc. without it?
