What can I say about applesauce… It’s a humble wallflower that at times gets looked over in the culinary world.  Longing for her Johnny to come and rescue her from the corner. (This is a Dirty Dancing reference if you are under the age of 35… “Nobody puts Baby in the corner!” Youtube it!) Meek applesauce quietly sits back and waits to shine… And shine she does. Just like Jennifer Grey’s famous leap into Patrick Swayze’s waiting arms, applesauce can elevate a boring dish to new heights or become a lovely afternoon snack paired with cottage cheese. Simple by nature, this humble sauce can easily be forgotten in the back of the pantry collecting dust rather than helping to create amazing dishes as a good supporting actor. 

Not to knock commercially prepared applesauce, but when you have the opportunity to enjoy homemade applesauce, you will know the difference. It’s sweet and tangy with the perfect texture. Many people seem to feel like applesauce is mere toddler food, not a great way to preserve the bounty of our Autumn apple harvest. Not to mention, impart great flavor in baked goods and all kinds of sweet and even savory dishes. 

I grew-up eating commercial applesauce as a kiddo, as many children in our country do. However, I remember the day when I was introduced to home-canned applesauce. My Aunt Oleta’s applesauce to be exact. I have no idea what my sweet Aunt put into that applesauce but it was a pure revelation to me. We grew-up preserving peaches and pears, a few pickles now and then, but we didn’t really preserve applesauce. I guess my Mom was fine with what was available at the market. Not to knock commercially prepared applesauce, but when you have the opportunity to enjoy homemade applesauce, you will know the difference. It’s sweet and tangy with the perfect texture. Not to mention the fact that it harmonizes well with many different notes on your palette AND, it’s super easy to make!

How to Make Applesauce

If you are new to preserving, I feel like applesauce is a great way to start. It’s a very forgiving process and if you follow a few basic steps, use good ingredients, and have a few good tools on hand, you are guaranteed success. It’s also a quick process that won’t take all day if you have the right tools.

Back in college, I was a Kindergarten teacher’s aide. One year we were piloting a program where we incorporated cooking into the normal daily curriculum. Once a week we would help those cute little 5-year-old hands learn how to prepare yummy dishes, all the while learning great life and academic skills. One of our first recipes was applesauce and I was introduced to an apple peeler/corer tool.  I thought that was the greatest thing since sliced bread. I was dreading peeling and coring all of those apples that day. (We had 4 classes that I worked with every day.) I thought that tool was going to make my life. I ran out and bought one soon after to make sure I always had one on hand for when I was making anything that needed peeling and coring. However, even with that handy tool, prepping the apples was a laborious & messy job. Then I was introduced to the Ball® FreshTech Harvest Pro™ Sauce & Salsa Maker.

This gem of a machine has made making applesauce and any kind of other sauce a piece of cake! For applesauce, you don’t even have to peel or core the apples at all. Awww, throw caution to the wind and even leave the stems on! This my friends is a game changer… Check it out.

You feed the softened apples into the top of the machine, they are then fed through the machine with an auger then pushed through a metal screen. The metal screen grabs all of that apple goodness on the inside of the apple and then sends the undesirable stuff, the seeds, core & skin through on its way through a different tube. It’s brilliant!

Maple Applesauce Recipe

Now, all we need are our fresh ingredients. This is the easy part, all you need are apples, cinnamon sticks & maple syrup. Yep, simple & fresh.

As with apple pie, a mixed variety of fresh apples is best to make applesauce with, leaving the skins on boost nutrition and adds subtle pink hues. The addition of maple syrup creates a slightly sweet, very Fall flavor.

With our Ball® FreshTech Harvest Pro™ Sauce & Salsa Maker to process the apples, there is no need to core or peel them.

Makes about 5 (24 oz) pint and half jars or 3 (32 oz) quart jars 

  • 12 pounds apples, cored and quartered (peeled if desired) 
  • 1 cup water 
  • 2 cinnamon sticks (optional)
  • 1 -1/4 cups maple syrup     

Directions:

  1. Combine apple quarters, cinnamon sticks and water in a large stockpot. Cook over low heat, stirring occasionally, until apples are very tender, about 25 minutes. 

  1. Process apples in batches through a Ball® FreshTech Harvest Pro™ Sauce & Salsa Maker, food mill or food processor until smooth, removing cinnamon sticks. Alternately, crush apples with a potato masher for a chunkier texture.

  1. Prepare boiling water canner. ( I use the Ball® FreshTech Electric Water Bath Canner.) Heat jars in simmering water until ready to use, do not boil. I’m using my favorite Ball® Quart (32 oz.) Sharing Jars for this recipe. Wash lids in warm soapy water and set aside with bands. 

  1. Return applesauce to stock pot, add maple syrup and bring to a simmer over medium heat, stirring constantly, for 10 minutes.

  1. Ladle hot applesauce into a hot jar leaving a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on the jar and apply the band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.

  1. Process jars 25 minutes, adjusting for altitude. Turn off heat, remove the lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for a seal, they should not flex when the center is pressed. 

Now’s the hard part, sitting and waiting for them to rest before you can devour them!

Maple Apple Sauce Overnight Oatmeal

One way I love to use my applesauce is in the overnight oatmeal. It adds a fresh kick to a sometimes one-note oatmeal experience. This recipe is simple to whip up the night before and then pull from the fridge as you are running out the door.  

 

1/2 cup rolled oats

1/2 cup Greek yogurt

1/2 cup applesauce 

1/2 cup milk of your choice

Place all of your ingredients into a jar, replace lid and shake really well.

Place in the fridge overnight. The next morning serve cold or warmed, topped with fruit, nuts & additional maple syrup if you’d like.

It’s true magic when we are all together and having fun just being together, but… When the wind is blowing from the east or someone’s foot touches someone else’s personal space, WATCH OUT! Think super collider!

We had one of those super collider days a few weeks ago, right before school started again. Actually, I believe it was the last Friday before school started the following Monday. We were all on each other’s last nerve. We had just returned home from a two week long road trip and we decided at the last minute to paint a couple of the girl’s rooms in our new house. Brilliant! Not our best move…

That afternoon, I just couldn’t take it anymore. I needed a break. I needed some ME time. I needed a treat. I didn’t know what. I didn’t want something full of sugar, but I still wanted it to feel decadent. I wanted it to be special.

The closest store to our home is Walmart and I decided to head there. I really don’t know why I chose Walmart, other than it was the closest place that was easy to escape to and I could wander the aisles aimlessly until I found that special something that could get me out of this bad attitude. Mom needed a timeout!

I wandered to the bakery, nothing looked tempting. I hit the candy aisle, again nothing hit the mark. Freezer section, nothing. I wanted something cool & creamy, not too sweet, something that tasted real.

I rounded the corner into the dairy section at Walmart and it hit me… I knew exactly what I wanted to help wash away the frustrations of the day, Oui by Yoplait.

I saw this new yogurt and before I even registered what it was, I knew that was what was going to hit the spot. It was so cute and you know how much I LOVE great branding. You may find it a little weird but, my children have been trained after 7 years of blogging, if Mom comes in the house with something and she says that, “it’s for the blog,” they WILL NOT touch it. In 7 years of blogging, I have never taken advantage of that… Until now!  You guys, this yogurt is so good! Yoplait has hit it out of the park with this one. It’s thick, creamy and not too sweet and boy, I’m not going to share!

It’s made the traditional French way with simple, straight forward ingredients. The vanilla flavored Oui by Yoplait is made with; milk, cane sugar, yogurt cultures (L. bulgaricus and S. thermophilus) and vanilla extract. That’s it!

Their cows that produce the whole milk are feed a Non-GMO diet. The fruit is REAL, nothing is artificial. The French believe the measure of good food is the pleasure and joy it brings to life. That is exactly what I needed at that moment. Something cool, creamy & subtly sweet to bring back the joy that I needed to go back home to be with my family, with the right attitude in tow.

Green Chili and Salsa Egg Muffins Recipe

Always on the run in the morning? YEP, us too! Here’s how I figured out how to make a scrumptious egg muffins recipe for on-the-go!

Call me crazy, but I’m not always up for sweets in the morning. I’m one of those people that do really well with some scrambled egg or something like that in the morning. Sadly, we don’t always have time to bust out a pan, whip up some eggs and scramble them before work and school. We needed a take-an-go option for eggs. I thought and egg muffins (minus the Mc) would be a great way to take scrambled eggs on the go. The bonus, you can make them days ahead and either refrigerate or freeze them.

They literally take just minutes to whip-up, then you bake them in the oven. Let them cool and I wrap them in wax paper or store them in an airtight container. When you’re ready to eat them, pop them in the microwave for 30-40 seconds and you have a GREAT breakfast on-the-go!

When I was a kid, I wasn’t a huge fan of yogurt. The overly sweet, artificial tasting yogurt my Mom would serve was always too runny for my taste. Even as an adult, it had never really been my go-to meal or snack.

That is, until I went to Europe and was introduced to skyr. A traditional Icelandic recipe (it’s been used for over 1,000 years!) that kiddos in the region grow up on, it’s rich, creamy, not overly sweet, and full of protein. I fell in LOVE with it! It’s made by warming skim milk, adding active cultures, and after several hours, straining the mixture to separate the yogurt from the whey (the water that is in milk). They then serve it with any number of great toppings.

The first time I tried it, I knew I had found what I had been looking for. I couldn’t get enough of it! The idea of coming back to the States without it was truly sad. In Europe, I ate skyr everyday with all kinds of fruit and muesli, an all-natural, whole grain cereal–kind of like granola–that is popular in Europe.

Like all good things, my trip had to come to an end. I came home and mourned the loss of my favorite breakfast food and snack. I looked forever to find something that was even close to what I had eaten in Europe. After a while, I nearly gave up, and accepted the fact that I was stuck with traditional U.S. yogurt.

Then a few years ago I was introduced to siggi’s yogurt and gave it a try. I thought the name and packaging were really fun, and when I tried the yogurt I was whisked back to my European travels in an instant. I could tell that it was made with natural, high-quality ingredients and not a lot of sugar (they use agave nectar, natural sugar, and no artificial flavors or preservatives). siggi’s was that beautiful, protein-packed skyr that I had been looking for, and I could finally start having my European breakfast power bowls again!

Here’s my favorite way to eat siggi’s these days…

My Favorite (And Simple!) Breakfast Power Bowl

⅓ cup of granola

(1) 4.4 oz. container of Siggi’s 4% strained whole milk yogurt

½ cup mixed berries

1 teaspoon local honey

⅛ teaspoon chia seeds

It’s incredibly simple! You layer each ingredient on top of one another, starting with the granola.

Pour ½ of the granola into the bottom of your bowl.

I top that with my favorite fruits: fresh blackberries and raspberries and add my siggi’s.

I love that they let me select how much fat I can have when eating siggi’s. I typically prefer the 4% milkfat, whole milk varieties. Not all fat is bad.

Look at how rich and creamy that looks! I top that with the rest of my granola, a little local honey and, if I’m in the mood, some chia seeds.
