Hi everyone! My name is Whitney from the blog eat sleep cuddle., and I am so excited to be doing a guest post for Whipperberry today! I wanted to share a quick and super easy recipe with you guys that is the perfect comfort food for Fall–oven baked tin-foil dinners with homemade ketchup! YUM.
Tin-foil dinners are so easy to make, and so convenient when you cook them in the oven. I made one just for myself, but you could have your whole family build their own tin-foil dinners and put them all in the oven together for a fun family activity. The possibilities are endless!
Here's what you do….
Step 1: Choose your favorite veggies. [I chose green beans, pearl onions, carrots, and a yam, but you could use any vegetable. You can also add meat too, of course, but I chose to do mine vegetarian-style.]
Step 2: Cut up veggies, drizzle with olive oil, add salt and pepper, and add your favorite spices and/or seasonings. [I used rosemary and thyme.]
Step 3: Roll up your dinner in double layered tin foil and make sure it is closed on all sides so you don't lose any juices. Bake at 375 degrees for about 45 minutes or until vegetables are tender.
Step 4: Enjoy with some homemade ketchup! (Recipe below…)
HOMEMADE KETCHUP
2 tbsp olive oil
1 medium onion, chopped
1 clove garlic, chopped
1 28-oz can tomato puree
1/2 cup honey
1/4 cup apple cider vinegar
1 tbsp tomato paste
1 or 2 tsp salt
1/2 tsp ground mustard
1/8 tsp ground cloves
1/4 tsp allspice
[and if you want a little extra kick…]
2 tsp red pepper flakes
1/2 tsp cayenne pepper
1. Saute onion in olive oil over medium heat until translucent [about 6-8 minutes]. Add in rest of ingredients and stir to combine. Increase heat to high and bring to a boil, then reduce heat to low and simmer for 45-60 minutes, stirring occasionally, until it gets thick like ketchup.
2. Use an immersion blender, food processor, or blender to puree the mixture until smooth.
3. Pour into container(s) and refrigerate for up to a month.
NOTE: You can always adjust seasonings so it is just how you like it. The cloves and allspice add a really rich, deep flavor, but to get a more "normal" tasting ketchup you can go without the extra seasonings and the recipe should still work. Personally, I don't like things too spicy so I go light on the red pepper flakes and cayenne pepper, but pretty heavy on the salt.
