Pumpkin Spice White Chocolate Cookies with International Delights

What makes the Holidays for you? Is it the chill in the air, the memories of family traditions, the beautiful decor or the festive music? For me it's the flavors of the season. Nothing ushers in the holidays better than a good dose of pumpkin spice, gingerbread or peppermint. I have very found memories of my mother breaking out all of the famous family recipes at this time of year, filling our home with the flavor and scents of the holidays. For my children I hope I am doing the same. I have some old family recipes and then I love to experiment with new versions of old classics. Back in the day, our Grandmothers didn't have fun new ingredients like International Delights Coffee Creamer to play with when developing their famous recipes. What a fabulous new ingredient we have when it comes to Holiday baking!

There is nothing I love more in the fall and winter than to cozy up with a good spice cookie and a mug of hot chocolate. This year I started to play around with a ginger molasses cookie and thought it would be even more lovely if I added a hint of International Delights Pumpkin Pie Spice Creamer to the recipe… it turned out like a dream.

I initially conceived the idea after finding a fun recipe from my friend Kristy over at Diary of Dave's Wife for her Molasses Pumpkin Kiss Cookies. My issue, I didn't have any of the Pumpkin Kisses so… I decided to try the International Delights Pumpkin Pie Spice creamer and then toss in a few white chocolate chips for good measure. They turned out divine, here's the recipe…

Pumpkin Spice White Chocolate Cookies

  • 3 1/4 cups flour
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) butter, softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1/4 cup International Delights Pumpkin Pie Spice Creamer
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1 cup white chocolate chips

1. Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in large bowl. Set aside. Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg, Pumpkin Pie Spice creamer and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Pour in the chocolate chips and slowly mix into the dough. Put dough in an airtight container and chill for at least four hours, best if overnight.

2. Preheat oven to 350°F. Shape dough into 1-inch balls. Roll in granulated sugar to coat. Place 2 inches apart on ungreased baking sheets.

3. Bake 8 to 10 minutes or until edges of cookies just begin to brown. Remove to wire racks; cool completely. Store cookies in airtight container up to 5 days.

    really creamer to bake with? the salted carmel looks good mmmmmm. i cant wait to try them. thanks for sharing, god bless. i wounder if you can use the salted carmel and turn it into a wipped topping?
