Looking for a fun way to jazz up your shrimp? I hosted a coconut dinner party the other night and these Coconut Curry Shrimp were tasty little bites! Not your traditional coconut shrimp which usually has a tropical flair, this recipe takes it’s inspiration from India and there is no deep frying involved.

Time Saving Tip // You can make up your sauce before hand to save time and then reheat and cook the shrimp right before you serve to your guest.

These quick and tasty little bites are a perfect appetizer that your guest will love!

Ingredients
  • 1 pound of large shrimp, peeled and deveined
  • 1½ cups of Silk Original Coconut Milk
  • 1 tablespoon curry powder
  • 1 tablespoon minced ginger
  • 2 whole cloves of garlic (leave as a whole clove but smash)
  • salt and pepper to taste
  • 1 tablespoon fresh lime juice
  • 1 cup coconut powder
  • fresh lime wedges for serving
Instructions
  1. In a medium sauté pan, mix together the coconut milk, curry powder, ginger and garlic. Slowly bring to a boil over medium low heat. Simmer for 7-10 minutes until the sauce starts to thicken. Add salt, pepper and lime juice.
  2. (At this point, you can refrigerate your sauce and save until right before you want to serve your shrimp before your event.)
  3. Once your sauce is simmering, add your cleaned shrimp, toss around in the sauce and cook until the shrimp have turned pink and are opaque in color. Do not over cook. This will take about 4-5 minutes depending on the size of your shrimp.
  4. Place your coconut powder in a bowl. Toss your cooked shrimp in the coconut to coat. Serve with a lime wedge and enjoy!

Silk Tastemaker Challenge // It's interesting how little everyday experiences can draw you back to big, colorful, vibrant, life changing experiences from the past. The very first thing that popped into my head was a photo I had taken a few years back while I was walking through the streets of Paris taking in all the sights, sounds, smells & flavors of my favorite city. Paris is known for their street markets and all of the markets have these out of this world fruit stands. Fruit like nothing we get here in the United States. Beautiful, scrumptious berries that are a feast not only for your mouth but for your eyes as well…

My Silk Experience 

They would have cart after cart filled with berries of various types and they were just stunning to look at, but even better to eat. The berries had a vibrant, fresh quality that I hadn't ever experienced before. Maybe it was the magic of Paris, but they tasted sweet, bold & alive.

Just imagine, you've loaded your market basket with all of your favorite berries and then stopped off at the dairy cart and grabbed a pint of ice cold cream. When you arrive home you fill a bowl with berries, a dash of sugar and poured some cream over the top. That my friends is pure Heaven if you ask me.

My kiddos just adore it, and they are PICKY!! My little Gage is especially picky and won't eat any kind of protein other peanut butter. That's it! He LOVES his Silk Fruit & Protein and I know that he is finally getting some healthy soy protein into is little growing body. Not only that, but he is getting 50% more calcium than milk with his Silk as well. Not to mention without all the added fat. Total WIN!
