Have you been intimidated with the thought of making fresh donuts at home?

Yep… me too. It just seemed like one of those goodies that was best left to Mr. Dunkin or the all mighty Crispy Kreme. Not any more… 

A few years ago our family went on a winter hayride with a bunch of friends with the promise of fresh donuts and hot chocolate to follow the little trip. When we returned home after the cold outing I was shocked to find that they indeed were making fresh donuts, but nothing like anything I had ever seen before. They were taking canned Pillsbury® biscuit dough and frying it up to make donuts. Eureka! They were simple and fabulous! 

I was reminded of that night the other day when I was at the market and saw some blueberry Pillsbury biscuits in the dairy case. I thought, wouldn't a blueberry biscuit "donut" with a lemon glaze be just divine? I immediately had to run home and give it a try. The results were astounding. My family loved them! The girls thought they were the best of both worlds. They were like a donut and muffin all in one. I loved how easy they were to make and clean-up after… plus I was elevated to rock star status for the morning. Yea, that counts!

Here is how you can become a rock star in your house too…

Lemon Blueberry Donut Recipe

1 16.3 oz can of Pillsbury® Grands® Homestyle refrigerated Blueberry Biscuits

4 cups canola oil (more or less depending on the size of your pot. You need to have the oil at least 2 inches deep.)

1 lemon

2 cups powdered sugar

a pinch of salt

Directions

Place large heavy bottomed pot over medium high heat. Pour in oil until it is about 2 inches deep. Let oil heat up until it is about 350˚. While waiting for the oil to heat, open biscuit can and separate all eight biscuits. Using a large pastry tip cut a hole into your "donut."

Keep the "holes" and fry them up along with the donut rings. Carefully place the donuts one or two at a time into the hot oil. Do not let them sit on the bottom of the pot, they will burn easily that way. Use a slotted spoon to kind of float them in the oil for a few seconds to seal the dough before you let it float on it's own.

Keep and eye on your oil temperature and don't let it get too hot. Let the donuts cook for a minute or two on the first side and then carefully flip the donuts when they are a nice golden brown…

Once the donuts are golden brown on the other side after a minute or two, remove from the pot and place on a paper towel to collect extra oil. Let cool.

In a small bowl add the juice of one lemon and the powdered sugar and salt. Mix together well until it has the consistency of thin glue. Place a donut in the glaze and using a straw, chop stick or butter knife, grab the donut out of the glaze by grabbing it through the hole, and place on a cooling rack. Repeat with the remaining donuts and donut holes.

Let the glaze dry for a few minutes, then… ENJOY!!

Who doesn’t love tacos? With this fun spin on a simple classic recipe your gathering is sure to be a hit. You can serve taco hand pies as the main dish or make them a little smaller and use as an appetizer for a cocktail party. They are so versatile. Here is how you make them.

Ingredients
  

  • 1 tbsn Olive Oil
  • 1 Sweet Onion
  • 1 lb. Ground Beef
  • 1 packet Taco Seasoning
  • 1 can fat free refried beans
  • 1 can black beans
  • 1 can drained corn
  • 1 pack Kraft Finely Shreeded Cheese
  • 2 cans Pillsbury Corn Buscuits
  • 1 egg beaten

Instructions
 

  • First, you will need to cut your onion into strips. I cut my onion in half and then cut into strips. In a large skillet add the olive oil and place over a medium high heat. Once the oil is hot add your onions and sauteé for 3-4 minutes until translucent.
  • Add your ground beef, season lightly with salt and pepper. Break-up the ground beef into small pieces and brown. Once the meat has browned, remove excess grease with a spoon and discard. Stir in the taco seasoning over medium heat.
  • Add the refried beans, black beans and corn. Let this mixture come to temperature and the remove from heat.
  • Lightly flour a clean dry surface and roll out your first corn biscuit. Place about a 1/4 to a 1/3 of a cup of the taco meat mixture in on the rolled out biscuit and top with a generous helping of Kraft® Shredded Cheese.
  • Then with a pastry brush, brush on a bit of egg wash along the edge of the biscuit dough. Fold over and seal with a fork.
  • Place on a baking sheet and brush the top of the hand pies with the egg wash. Repeat with remaining biscuits.
  • Bake in a 350˚ oven for 14-15 minutes. Remove from oven and let cool for a few minutes.

The kiddos and I have come up with three Santa Approved cookie recipes that are for sure going to be a hit with the big guy and anyone else who has a chance to give them a try. They are so easy to make, they will be a perfect way to bake with the little ones in your life.

On the top left spot we have a fabulous Chocolate Candy Cane Cookie. Top right, we have a Dark Chocolate Crinkle Cookie and in the bottom spot, a bit of Egg Nog heaven… Little Egg Nog Bites. Each one of these cookies are high on Santa’s favorite flavors list, so… They should be a big hit! Here are the recipes and a bonus printable For Santa printable sign!

Chocolate Candy Cane Cookie Recipe

1 box of Pillsbury Chocolate Peppermint Cookie Mix

1 stick of softened butter

1 egg

1 cup mini chocolate chips

1 container Creamy Supreme® Peppermint Frosting

1 container Holiday Funfetti® Rudolph Red Vanilla

Directions

In a large mixing bowl, mix the Peppermint Cookie Mix according to package directions. Add chocolate chips and 1/2 of the peppermint candy bits and combine.  Scoop into 2 inch size balls and place on a parchment lined baking sheet. Bake in a 350˚ oven for 11 minutes. Remove from oven let cool on pan for one minute and then transfer to a cooling rack.

Once they are completely cool they are ready to decorate. Place the Peppermint Frosting in the microwave for 30 seconds and pour into a Ziploc bag. Cut a SMALL hole in the corner of the bag and drizzle the frosting over the cookies. Repeat with the red frosting. Sprinkle with the remaining peppermint candy bits. Yields 12-14 cookies.

Dark Chocolate Crinkle Cookie Recipe

1 box of Pillsbury Dark Chocolate Cake Mix

1/4 cup canola oil

2 eggs

1 cup mini chocolate chips

1 cup powdered sugar

Directions

In a large bowl combine cake mix, oil, eggs & chocolate chips.  Scoop into 2 inch size ball and roll in powdered sugar.

Cover with the powdered sugar and place on a baking sheet.

Bake at 350˚ for 11 minutes. Remove from oven, let cool for a few minutes on the baking sheet and then place on a cooling rack to cool completely. Yields 14-16 cookies.

Little Egg Nog Bites Recipe

1 box of Pillsbury Traditional Sugar Cookie Mix

1 stick of softened butter

1 egg

2 teaspoons rum extract

1/2 teaspoon of freshly grated nutmeg

2 teaspoon of pumpkin pie spice

1 cup sugar

Directions

In a large bowl combine cookie mix, butter, egg, rum extract, 1/4 a teaspoon of nutmeg and 1 teaspoon of pumpkin pie spice.  Set aside.

In a small bowl combine the sugar and remaining nutmeg and pumpkin pie spice, mix well.

Roll cookie dough into 1 inch size balls and roll in spiced sugar mixture. Place on a cookie sheet and bake in a 350˚ oven for 8 minutes. Remove from oven and let cool on baking sheet for one minute then transfer to cooking rack to cool completely. Yields 24-30 small cookies.

Contributor Update from DecoArt & Pillsbury // Hey there friends! This last weekend was kind of crazy around these parts… We are actually MOVING again! We finally found a home here in Lincoln that will fit our family sooooo much better than the one we are in right now. Thank goodness. It' s been a long 11 months in our Craig's List, site-unseen, rental adventure. "Anyone can do anything for a year," has been my mantra for the last 11 months. It's been a good growing experience for the whole family. I will however, miss the fabulous yard and the Little Red Barn! I may have to build my own little red barn at the new house.
