The Best Salsa to Beat the Winter Blues

0 · Jan 12, 2012 · 8 Comments

I don't know if any of you are like me, but every January, at least one of my New Year's resolutions includes some kind of healthy eating goal.  I try new recipes and tricks to stay fuller longer on fewer calories, boost my fruit and veggie intake, etc. etc.  But the bottom line is, if I don't like it, I'm not going to eat it.  When my sister brought this salsa dip to a family function last year, I ate half the bowl before dinner ever started; it is SO good, and SO healthy.  So without further ado, here is a new, wonderfully healthy and satisfying recipe to add to your "good foods" list this year.

You'll need…

1-2 Roma tomatoes
2 ripe avocados
3 sprigs of green onions
1 can of black beans
1/2-3/4 c. frozen petite white corn
1/4-1/2 cup fat free Italian dressing

Dice the tomatoes and avocados and chop up the green onions and add them to your dish.  Strain and rinse the black beans and throw them into your dish along with the corn and dressing.
Serve with chips or as a topping for tacos, burritos, etc.

There you have it!  Super straight forward and easy.  I have to warn you though, this stuff only stays good for about 12 hours.  Avocados go bad quickly, so don't make it too far in advance.  You really shouldn't have a problem with making too much… at least, I never do!

Pazookie | Recipe

A few weeks ago I participated in the holiday cookie exchange at LoveFeast Table and thought I would share my Pazookie with you guys today.  No, no… it's not misspelled, it's a Pizookie in a jar, so I called it a PAZOOKIE. I came up with it for a fun, out of the box cookie exchange idea, but I think it would also be great for a cozy New Years celebration… So, here you have it, the Pazookie!

You may have heard of a Pizookie… a chocolate chip cookie baked in a pan and is kind of like a gooey, chocolate pizza.  Well, a Pazookie is a similar treat, however it is baked in a jar.  I am a big fan of creating fun treats in jars.  They are portioned perfectly and provide a fabulous blank canvas in order embellish your fun treat.  Here are some of the other treats in a jar from WhipperBerry…

Rosemary & Sea Salt Rolls in a Jar {Recipe Dress-up}

34 · Nov 22, 2011 · 27 Comments

Yesterday I was shopping for all my Thanksgiving goodies and totally remembered a FABULOUS roll idea.  I thought I would repost this great little goody… Rosemary & Sea Salt Rolls in a Jar so that you could use it for Thanksgiving if you would like.  It's crazy easy and absolutely STUNNING on the table.  So here you go…

I am almost embarrassed to post this recipe… it is sooooo easy and a total FAKE OUT!! It’s not really a recipe, more like a dress-up. Like if you were to take your old boring dinner rolls out for a night on the town dressed in her favorite heels and her finest pearls. It’s really that good. It all started like this…
