One of the best parts of Fall is the ushering in of the baking season! You know what I’m talking about… Summer has been so hot, too hot to turn on the oven. Plus, we’ve been enjoying the fruits of the season, YUM! Now it’s time to turn our attention to the love of all things pumpkin & spice that goes so well with my new Vanilla Macchiato Glaze that I’m sharing today.

 Now the reason I came up with this was a silly little mix-up in my schedule. I FORGOT that I needed to bring treats to a gathering of friends and I needed something quick!

I know you’ve been there at one time or another. I’m never adverse to bringing something store-bought to a gathering, I just have to dress it up a bit to make it “look” homemade. That is exactly what I did that afternoon. I ran to the store and bought some cinnamon coffee cake muffins and brought them home to dress them up. I thought they would look good if I put them into some fancier wrappers and then topped them off with a little glaze. I looked into my refrigerator and found some International Delight Vanilla Macchiato Creamer and thought it would make a lovely glaze.

Ingredients
  • 2 cups powdered sugar
  • ½ teaspoon salt
  • 3-4 tablespoonsInternational Delight Vanilla Macchiato Creamer
Instructions
  1. Pour the powdered sugar into a small bowl, add salt and then slowly add the creamer until you get the consistency you would like.

 Yep, it’s as easy as that. Using the creamer rather than milk adds that lovely flavor from the creamer to your glaze. It’s extra special! I just drizzled the glaze over the store-bought muffins and voila, I have a great treat that looks homemade! Shhhh, no one needs to know your secret.

Grilled Pineapple Delight Boats - A tropical dessert from WhipperBerry

We’re a huge fan of pineapple at our house! That fresh tropical flavor is perfect with all kinds of dishes from savory to sweet. I especially LOVE to grill pineapple during the summer months. One night I was enjoying some grilled pineapple and started to dream up a fun new dessert that I just had to try. It’s a cross between a taco and a cheesecake. Yep, kind of crazy but once you try it… You’ll know it’s crazy awesome!!

I started with the base of the dessert by using our favorite Old El Paso Mini Taco Boats. It’s a perfect 2 bite dessert that’s perfect for a party. I coat the mini taco boats in cinnamon sugar and pop it in the oven for a few minutes. Then I fill them with a scrumptious cream cheese mixture that also involves marshmallow creme… Yep, now we’re talking! Top that with some grilled pineapple and you will be in heaven. Here’s how to make them.

Ingredients
  • 1 package of Old El Paso Mini Soft Tortilla Taco Boats
  • Cooking Spray
  • 3 tablespoons cinnamon sugar
  • 2- 8 oz. packages of cream cheese - room temperature
  • 2- 7 oz jars of marshmallow creme
  • ¼ cup sweetened condensed milk
  • 1 tsp. vanilla
  • 1 pineapple
  • 12 blackberries - optional
  • ⅛ cup of toasted unsweetened coconut - optional
Instructions
  1. Prepare Mini Taco Boats first by preheating the oven to 400˚ then place Mini Taco Boats on a parchment lined baking sheet and spray with cooking spray.
  2. Coat each of the Mini Taco Boats with cinnamon sugar.
  3. Place in the oven for 8-10 minutes until golden brown.
  4. While the Mini Taco Boats are cooling, place the cream cheese, marshmallow creme, sweetened condensed milk and vanilla into a large mixing bowl and mix starting on the lowest speed and gradually increase the speed until the ingredients are fully combined. If you aren’t using this right away, you’ll want to place in the refrigerator until ready to use.
  5. Cut pineapple into roughly 1 inch wedges about a ½ and inch thick. Grill on a grill pan for 1 minute on each side or until you see some grill marks appearing. Remove from grill and let cool completely.
  6. To assemble your dessert either spoon or pipe your filling into the Mini Taco Boats, top with a couple of slices of pineapple, a blackberry and garnish with toasted coconut.

What’s even better is when you only need 5 ingredients AND you can make it the night before, pop it in the oven in the morning and voilá, a scrumptious breakfast is served!

That is exactly what you get when you make my simple overnight French toast. It’s easy to whip-up and the entire family will love it. My secret, I use International Delight Vanilla Simply Pure Creamer. It’s made with real milk, vanilla & sugar, that’s it. It’s simple and pure, just like its name. The great thing about using  Simply Pure for this recipe, is that I can eliminate 2 ingredients from my typical ingredient list. Simply pure already has the sugar and vanilla, it’s perfect! Here’s what you will need…

Bread (preferably day old), eggs, salt, berries (optional) & Simply Pure vanilla. That’s it! For you campers out there, this will be a prefect way to easily travel with your ingredients and then bake in a dutch oven. Here’s how you make it…

Seriously, easy as that! My family went nuts when I served this the other night for dinner along side some scrambled eggs. They’ve added it to their must have often list. What’s fun is that it’s a perfect meal to make with your kiddos.  And really truly, you don’t have to wait overnight for this gem of a meal to appear on your plate. You can whip it up and let it sit for about 20 minutes and it will be just as scrumptious BUT, you can make it the night before and cut down on morning prep time. It’s great for when you have company in town.

This easy French toast casserole is a fantastic make ahead meal for those busy mornings. Your family and friends with love it!

Serves: 6-8
Ingredients
  • 1 loaf of bread (day old if possible)
  • 6 eggs
  • 16 oz. of Simply Pure Vanilla Creamer
  • ½ teaspoon salt
  • 1½ cups of berries - fresh or frozen
Instructions
  1. Cut bread into bit-sized cubes.
  2. If your bread is fresh, place on a baking sheet and bake for 10 minutes at 350˚ to dry it out a bit.
  3. In a medium bowl, add the eggs, creamer and salt and whisk.
  4. In a small baking dish roughly 8x8, spray with cooking spray then add your bread, berries and top with egg and cream mixture.
  5. If you are baking right away make sure everything is submerged in the egg mixture, let sit for 20-30 minutes.
  6. If you are baking later, cover with foil and place in the refrigerator until ready to bake.
  7. Preheat the oven to 350˚
  8. Place casserole into the oven and bake for 40-50 or until set and lightly browned.
  9. Let cool for a few minutes then serve with fresh berries. It's sweet & moist enough that you don't even need syrup!

One of the first things that I think of when it comes to summer cooking is my favorite TOMATO!

 I think I’ve said this before, but I LOVE tomatoes!

A few weeks ago, I shared a lovely Tomato Jam recipe that is perfect for those BLT’s, burgers, wraps… Pretty much anything that you want to add a little kick of tomato to.

The key is getting really good tomatoes!

Because of that, I was thrilled to find out about Bushel Boy Tomatoes™ grown right here in the USA, in Minnesota to be exact.

The crew at Bushel Boy has developed a fabulous greenhouse system that helps them grow tomatoes year-round. Yep, even in January they have beautiful red, vine ripened tomatoes ready for us to add to our salads and sandwiches. I don’t know about you, but a nice good tomato in January is pretty awesome!

The Bushel Boy Tomatoes are pollinated with bees… the natural way. They also limit the amount of pesticides used and have eliminated herbicides all together. You can find all kinds of tasty ideas at the Bushel Boy Facebook.

Today, I’m sharing a fantastic Tomato Tart that is perfect for a light lunch or dinner. Paired with a nice garden salad, it’s the perfect summer meal!

 You can make them as individual tarts or make one large tart for everyone to share.

This scrumptious tomato tart is the perfect light summer meal!

Recipe type: Light Meal
Serves: 4 servings
Ingredients
  • 2-3 Bushel Boy Tomatoes
  • 1 store bought pie crust
  • 1 egg
  • 1 cup ricotta cheese
  • 1 cup chive cream cheese
  • ½ cup shredded parmesan cheese
  • salt & pepper
  • chives
Instructions
  1. Preheat oven to 450˚
  2. Line your tart pan or baking pan with the pie crust, gently press down on the top of the pan to remove excess dough.
  3. Pierce the the dough with a fork and place in a 450˚ oven for 8 minutes.
  4. Remove tart shell from the oven and let cool for a few minutes.
  5. In a medium bowl, whisk the egg then combine the ricotta cheese, chive cream cheese, ½ of the parmesan cheese, salt & pepper.
  6. Fill tart or tarts with the cheese mixture.
  7. Top the tart or tarts with fresh sliced tomatoes.
  8. Season the tomatoes with salt & pepper and then top with parmesan cheese.
  9. Place in a 400˚ oven for 30 minutes for a large tart and 20 minutes for small tarts.
  10. Remove from oven and let cool for a few minutes, then serve with a nice garden salad.
