Tropical Green Smoothie Recipe

Hello Whipperberry readers!  Jenn here again from Clean and Scentsible.  Easter is just a few days away, and if you are anything like me, you have already been digging into all of that Easter chocolate.  I thought that a green smoothie recipe would be the perfect way to balance out all those sweets and provide you with a little energy boost for all of your holiday festivities.  I’m sure we could all use a little detoxing after this weekend!

Tropical green smoothie - healthy and delicious!

I have really been trying to eat more fruits and veggies lately and have found that smoothies are the best way for me to fit them all in!  This tropical green smoothie recipe provides lots of healthy nutrients while still tasting delicious.  Even my kiddos give it the thumbs up!

INGREDIENTS

  • 1/2 cup mango
  • 1/2 cup sliced pineapple
  • 1/2 banana { I like using frozen bananas but you don’t have to}
  • 1/2 cup orange juice {or any other juice, almond milk, soy milk, etc.}
  • large handful of kale leaves
  • 1 tbsp sprouted chia and flax seeds {optional}

Tropical green smoothie recipe.
Just blend everything up and add a little pineapple for garnish.  If it is too thick, add a little water and if you like it thicker, add an ice cube or two.  And then just enjoy! 🙂

Agave Chicken Lettuce Wraps

Agave Chicken Lettuce Wraps // Maybe you have heard of agave syrup, but haven't taken the leap of trying it yet! I am like you, and probably wouldn't have, had I not visited a spa that served lettuce wraps with it as a dressing. After having those tasty lettuce wraps, I had to come home and try to recreate that amazing taste, and I knew the key was the Agave syrup. These healthy wraps are easy to make, only use a few ingredients and are delicious. 

Agave Chicken Wraps

Ingredients:

2 Chicken breasts, cooked and cubed

1/4 cup chopped fresh cilantro

1/2 cup roughly chopped pecans

1/2 lemon juiced

2-3 tbs agave syrup

Lettuce (Bib, Boston or Butter lettuces work great)

Pecans

Cook your chicken breasts your preferred way and let cool. Placing them in a casserole dish with a sprinkle of salt and pepper is the easiest and then either bake in the oven or microwave, depending on what dish you have.

Once cooled and cubed, place your chicken chunks in a bowl. Mix remaining ingredients in and then lastly, add the splash of lemon before refrigerating.

This salad mixture is best served cold, spooned into leaves of your favorite lettuce.

When serving, you can add a drizzle of the agave syrup to the plate for presentation. 

Feel free to change ingredients based on your taste! 

Also consider adding:

-chopped cucumber

-diced green onion

-pomegranate seeds

-sesame or chia seeds

Cranberry & Feta Cole Slaw Lettuce Wraps

Hello my Whipperberry friends!  It's me, Shannon, from eat.sleep.make.  If any of you follow us over at ESM, you know that I'm a vegetarian.  I share an abundance of veggie-friendly recipes that I've come up with.  Today I'm going to share with you a delicious (and very pretty, if I may say so) Cole Slaw lettuce wraps recipe.  This is perfect for holiday gatherings or even just for no reason at all!  I chose to use all organic products.  And not only is this organic and vegetarian, but it is also gluten-free.
 
 
Measurements:
1/2 cup Cranberries
6 cups chopped Cabbage
1 Carrot
1/3 cup Mayo
1 tablespoon Honey
Fresh Ground Black Pepper (to taste)
1 teaspoon Celery Seed
1/2 Squeezed Lemon Juice
Feta
1 teaspoon Raw Sugar
 
1 – Slice and dice your cabbage and carrot
2 – In a food processor, chop up your cranberries and Raw sugar.
3 – In a bowl, mix your cranberry/sugar into the mayo, lemon juice, and honey.
4 – Pour cranberry/mayo mix onto cabbage and carrots.  Add celery seed and black pepper – MIX.

 

 

 
5 – Once your cole slaw is done, clean and lay out one leaf of butter lettuce.  Fill it with your cranberry cole slaw, drench with feta and wrap it.
6 – Enjoy!

Healthy Ice Cream Sandwiches

Hello Whipperberry readers! Jenn here from Clean and Scentsible!  I'm so excited to be back here today sharing one of our kid-friendly, healthy summertime treats…
 
 
 
These ice cream sandwiches are very simple to make and the kids can have lots of fun coming up with their own variations.  To make the "ice cream" simply blend up 2 ripe, frozen bananas in your blender or food processor until it turns soft and creamy {like a soft served ice cream texture}.  Spoon the mixture between 2 graham crackers and place in the freezer for approximately 20-30 minutes {makes 6 sandwiches}.
 
 
My oldest is a huge sprinkles fan, so we added some colorful sprinkles to these ones.  They also taste wonderful with peanut butter {or Nutella!}spread over the graham crackers and, of course, adding a little chocolate is always a yummy option too! 🙂
