 This my friends is NOT your Mother’s traditional Jell-o Poke Cake. Nope, not even close.

This my friends is a MAGIC cake. It’s for those times when you don’t have the time to bake and slave over a special treat, but you still want to impress your friends and family. NO baking involved. Which in these hot summer months, who wants to turn on the oven. It has some unexpected ingredients that make it EXTRA special.

First off, I bought my angel food cake from the store… I know, Gasp!

Seriously, it’s summer… I’m too busy to bake with all of the activity at the house with the kiddos home. I grabbed an angel food cake at the market, some strawberry Jell-o some International Delight Simply Pure Vanilla. LOVE this stuff! It’s made with real milk, cream & sugar, that’s it!

I have always loved the jell-o poke cake I made some great Black Cherry Jell-o Cakes a few years ago and they were a huge hit.

Again, my problem here is that I just didn’t have enough time to bake, I improvised and came up with this great alternative. I also added a little extra love to the Jell-o to make it extra creamy. Here’s how you make it…

 Pour Jell-o packet into a 2 cup mixing cup.

 Mix with 1 cup of boiling water.

Stir to dissolve the gelatin completely.

 Once the gelatin has totally dissolved, add a few ice cubes, no more than 4, to slightly cool down the liquid Jell-o.

 Now for the secret ingredient! Add 1 cup of International Delight Simply Pure Vanilla Creamer.

 Stir to completely incorporate the creamer into the Jell-o mixture.

Now, it’s time to prep your cake. Place your cake on a cake plate. Don’t EVER serve a store bought cake in the container that it comes in. You want to at least TRY and fool your guest that you slaved all day in the kitchen!

 Now, take a skewer or knife and poke a bunch of holes into your cake.

 Next, pour your creamy jell-o mixture carefully onto the cake.

 Try and saturate as much as possible.

 I wanted to keep the sides of my cake as white as possible so I just poured the Jell-o mixture on top. You can do whatever you like. Place the cake in the refrigerator for a couple of hours.

While you’re waiting for the Jell-o to set, you can make the Chantilly Cream for the topping of the cake. YUM!

Remove the cake from the fridge and with a serrated knife, carefully cut the cake in half and remove the top of the cake.

 Spoon on the Chantilly cream on top of the first layer.

Next, layer some sliced strawberries in the middle.

Now, replace the top of the cake.

I actually flipped the layer over so the the cut side was on top. I just liked the way it looked better. Spoon another layer of the Chantilly Cream on top and then fill the center of the cake with raspberries, blackberries and top with a few strawberries.

 Then around the bottom of the cake fill up the plate with the remaining berries. I like to leave the stems on my strawberries to give it that rustic look, but that’s totally up to you. I also added in a few sprigs of mint to add even more green.

This Creamy Berry No-Bake Jell-o Poke Cake is truly a show stopper and you hardly had to lift a finger! It’s sooooo easy to make! NO baking skills required!

I do not drink coffee, I do however drink Choffy. A scrumptious coffee alternative. It’s basically brewed chocolate. YUM!  Well not really brewed chocolate… It’s roasted, ground and then brewed cocao beans. The same beans that they make chocolate from. When brewed this way, it is a dark, bitter drink pretty close to coffee (so I’ve been told.) And, just like coffee, it taste great with cream and sugar. This is super easy to make and you can use Choffy or any other coffee alternative like Pero, Postum or Cafix. They are all just as good. Brew a batch of your favorite coffee alternative and then pour over ice.

What’s even better is when you only need 5 ingredients AND you can make it the night before, pop it in the oven in the morning and voilá, a scrumptious breakfast is served!

That is exactly what you get when you make my simple overnight French toast. It’s easy to whip-up and the entire family will love it. My secret, I use International Delight Vanilla Simply Pure Creamer. It’s made with real milk, vanilla & sugar, that’s it. It’s simple and pure, just like its name. The great thing about using  Simply Pure for this recipe, is that I can eliminate 2 ingredients from my typical ingredient list. Simply pure already has the sugar and vanilla, it’s perfect! Here’s what you will need…

Simply Pure overnight French Toast from WhipperBerry

Bread (preferably day old), eggs, salt, berries (optional) & Simply Pure vanilla. That’s it! For you campers out there, this will be a prefect way to easily travel with your ingredients and then bake in a dutch oven. Here’s how you make it…

Seriously, easy as that! My family went nuts when I served this the other night for dinner along side some scrambled eggs. They’ve added it to their must have often list. What’s fun is that it’s a perfect meal to make with your kiddos.  And really truly, you don’t have to wait overnight for this gem of a meal to appear on your plate. You can whip it up and let it sit for about 20 minutes and it will be just as scrumptious BUT, you can make it the night before and cut down on morning prep time. It’s great for when you have company in town.

This easy French toast casserole is a fantastic make ahead meal for those busy mornings. Your family and friends with love it!

Serves: 6-8
Ingredients
  • 1 loaf of bread (day old if possible)
  • 6 eggs
  • 16 oz. of Simply Pure Vanilla Creamer
  • ½ teaspoon salt
  • 1½ cups of berries - fresh or frozen
Instructions
  1. Cut bread into bit-sized cubes.
  2. If your bread is fresh, place on a baking sheet and bake for 10 minutes at 350˚ to dry it out a bit.
  3. In a medium bowl, add the eggs, creamer and salt and whisk.
  4. In a small baking dish roughly 8x8, spray with cooking spray then add your bread, berries and top with egg and cream mixture.
  5. If you are baking right away make sure everything is submerged in the egg mixture, let sit for 20-30 minutes.
  6. If you are baking later, cover with foil and place in the refrigerator until ready to bake.
  7. Preheat the oven to 350˚
  8. Place casserole into the oven and bake for 40-50 or until set and lightly browned.
  9. Let cool for a few minutes then serve with fresh berries. It's sweet & moist enough that you don't even need syrup!

One of the first things that I think of when it comes to summer cooking is my favorite TOMATO!

 I think I’ve said this before, but I LOVE tomatoes!

A few weeks ago, I shared a lovely Tomato Jam recipe that is perfect for those BLT’s, burgers, wraps… Pretty much anything that you want to add a little kick of tomato to.

The key is getting really good tomatoes!

Because of that, I was thrilled to find out about Bushel Boy Tomatoes™ grown right here in the USA, in Minnesota to be exact.

The crew at Bushel Boy has developed a fabulous greenhouse system that helps them grow tomatoes year-round. Yep, even in January they have beautiful red, vine ripened tomatoes ready for us to add to our salads and sandwiches. I don’t know about you, but a nice good tomato in January is pretty awesome!

The Bushel Boy Tomatoes are pollinated with bees… the natural way. They also limit the amount of pesticides used and have eliminated herbicides all together. You can find all kinds of tasty ideas at the Bushel Boy Facebook.

Today, I’m sharing a fantastic Tomato Tart that is perfect for a light lunch or dinner. Paired with a nice garden salad, it’s the perfect summer meal!

 You can make them as individual tarts or make one large tart for everyone to share.

This scrumptious tomato tart is the perfect light summer meal!

Recipe type: Light Meal
Serves: 4 servings
Ingredients
  • 2-3 Bushel Boy Tomatoes
  • 1 store bought pie crust
  • 1 egg
  • 1 cup ricotta cheese
  • 1 cup chive cream cheese
  • ½ cup shredded parmesan cheese
  • salt & pepper
  • chives
Instructions
  1. Preheat oven to 450˚
  2. Line your tart pan or baking pan with the pie crust, gently press down on the top of the pan to remove excess dough.
  3. Pierce the the dough with a fork and place in a 450˚ oven for 8 minutes.
  4. Remove tart shell from the oven and let cool for a few minutes.
  5. In a medium bowl, whisk the egg then combine the ricotta cheese, chive cream cheese, ½ of the parmesan cheese, salt & pepper.
  6. Fill tart or tarts with the cheese mixture.
  7. Top the tart or tarts with fresh sliced tomatoes.
  8. Season the tomatoes with salt & pepper and then top with parmesan cheese.
  9. Place in a 400˚ oven for 30 minutes for a large tart and 20 minutes for small tarts.
  10. Remove from oven and let cool for a few minutes, then serve with a nice garden salad.
