5 Ingredient Barbecue Chicken Pizza

Even as a kiddo, I remember how important the sauce was. For years my Dad (he’s the primary griller in the house) would ALWAYS use KC Masterpiece®, always. My mom would stock-up and buy like 15,000 of them at a time (ok, maybe 6) and the panic button would be activated when we opened the last bottle. Yes, the sauce was that important in our house.

The same holds true for my house. I would have to say that there are very few products that I can claim brand loyalty for three decades and barbecue sauce is one of them, the other being my ketchup, but that another story. KC Masterpiece® has always been our go-to. Did you know that KC Masterpiece® was created by Dr. Rich Davis from Kansas City back in 1978. He created it for the first ever American Royal Barbecue Sauce Competition and won. The folks at KC Masterpiece® are celebrating a big anniversary this year… 35 years!!

To celebrate they have released a limited edition 35th Anniversary Sauce that is reminiscent of the original competition recipe from 1978. It’s lovely!

When the folks at KC Masterpiece® asked me to come up with a recipe for the special sauce, I knew instantly what I had to share. Our family’s favorite go-to dinner… Barbecue Chicken Pizza.

This recipe is so easy, it only has FIVE ingredients and it takes about FIVE minutes to pull together.

It’s one of those meals that I pull out several times a month on those busy nights when you need something quick, but still tasty. It’s also my go-to meal when I’m taking a meal to a family who is in need of a dinner. You know when Mom just had a baby or is sick. I make up a couple of these beauties in a snap, I take them over assembled but not baked. They can bake them when they are ready, they can even toss them in the freezer if they aren’t in immediate need. It’s PERFECT!

Barbecue Chicken Pizza

2 store bought already baked pizza crust

1 1/4 cups of KC Masterpiece Barbecue Sauce

1 store bought rotisserie chicken

1/2 of a large red onion sliced thin

3 cups of shredded mozzarella cheese

Yep, I told you it’s embarrassingly easy. I don’t even prepare the chicken. The secret is in the sauce. Seriously, I’ve made this meal at least 100 times and I have experimented with different sauces and it truly is the KC Masterpiece® sauce that makes it amazing.

I place the store bought pizza crust on a baking sheet. Side note... You can use store bought crust, make your own crust, use pita bread, biscuit dough, really anything for the crust. Our family likes thin crust pizza, so I buy the super thin store bought crust. Then I pour about 3/4 a cup of sauce on the crust and spread it all over.

Then I shred the chicken and place a heavy layer of chicken all over the crust. Another side note… On those nights when I’m not in that big of a rush, I make my own chicken by either roasting my own, boiling a couple of chicken breasts or even grilling them. It’s really whatever you like. I would have to say that 75% of the time I use the tasty store bought rotisserie chicken.

Then I add a layer of red onion… This is also a very important layer. Don’t skimp on the onion. This is what makes this pizza aaaamazing!

Next comes the cheese…

That’s it… Place it in a 400˚ oven for 12-15 minutes or until the cheese has melted and has lightly browned. You could even toss it on a grill if you don’t want to heat up your kitchen.

Serve with some grilled corn or a nice tossed salad and you have a wonderful easy to prepare dinner that literally took minutes to make and is a real crowd pleaser thanks to KC Masterpiece® and their amazing sauce! Vanilla Almond Panna Cotta Recipe

I LOVE Panna Cotta! Have you ever tried this simple yet scrumptious dessert? When it comes to dessert I LOVE smooth and creamy desserts that just melt on your tongue and panna cotta is one of those desserts that I just crave. It’s origins are from Italy and it translates to cooked cream.

That’s basically what it is, cream or milk simmered with sugar and vanilla, you then add gelatin and let it cool to create this decadent dessert. The nice thing about this dessert is that it’s kind of a blank slate, you can make it with what ever kind of milk you like and then top it with what ever you want. A few years ago I made a lovely Peaches and Cream Panna Cotta that was divine and today I have a fun new twist… I used Silk Almond Milk for part of the cream base!!

It turned out soooo good!! For this recipe, I used half Silk Almond Milk and half cream so it isn’t dairy-free but I’m sure you could play around with the recipe and create a dairy-free panna cotta with Silk.

Why did I add silk? Well… Adding the Silk Almond Milk added to the flavor of the panna cotta with a subtle almond flavor, plus It helps to cut the fat and calories of a normally high in saturated fat dessert. It also lowered the cholesterol in the dessert because Silk Almond Milk doesn’t have cholesterol! Now, keep in mind… I still use cream because I want that nice creamy texture, but by using Silk Almond Milk I cut some of the bad stuff in half!!

That’s why I decided to use Silk Almond Milk in my favorite Panna Cotta! Here is how you make it…

Vanilla Almond Panna Cotta Recipe

3 cups Silk Almond Milk vanilla flavored

3 cups of heavy cream

1 cup sugar

1 teaspoon vanilla extract

2 cups crème fraîche

​3 packets of gelatin

In a large sauce pan, add the Silk Almond Milk, cream, and sugar. Stir occasionally and bring to a simmer. Once it has started to simmer, remove from the heat and add the vanilla extract and crème fraîche and combine well. Once the mixture is nice and smooth, slowly whisk in the powdered gelatin.

Pour mixture into serving dishes and place in the refrigerator for three hours or until set. You can serve with berries and a berry sauce of some kind. I used Smucker’s PlateScapers for the berry sauce adding small circles to the top of the panna cotta for a stylish presentation.

Tropical Shrimp Bites

One of my favorite things to do when planning for a party or get together is coming up with unique menu items. Tasty dishes that are simple to make, but have a big WOW factor for my guests. Recently, the folks at Hidden Valley challenged me to come up with a new recipe for a appetizer using one of their fabulous Hidden Valley® products. I was super excited when I discovered their new Hidden Valley® Farmhouse Originals Mango Chipotle Vinaigrette and instantly I thought it would pair nicely with some type of shrimp dish. After some playing around, I came up with these super tasty Tropical Shrimp Bites…

The Mango Chipotle Vinaigrette is amazing with the shrimp! I added a little coconut cream and shredded coconut to the shrimp and then quickly baked them in the oven. I topped off the little bites with some grilled mango and pineapple and together the pairing was amazing.

Unfortunately my market didn’t have any fresh mango at the time so I had to used bottled mango, but it worked just fine. Here is how I made my Tropical Shrimp Bites…

Tropical Shrimp Bites Recipe

1 lb raw shrimp

1 bottle Hidden Valley® Farmhouse Originals Mango Chipotle Vinaigrette

1 cup coconut cream

6 oz. sweetened shredded coconut

1 fresh pineapple

1 mango

cooking spray

Directions

Prepare your shrimp by rinsing thoroughly and peeling off the shell if necessary. In a large bowl, whisk together the coconut cream and Hidden Valley® Farmhouse Originals Mango Chipotle Vinaigrette. Add shrimp to the coconut and vinaigrette mixture. Let marinade for no more than 15 minutes. Any longer in the marinade and the acid in the dressing will start to cook the shrimp and you don’t want that.

Preheat your oven to 425˚. Remove your shrimp from the marinade and place in batches into a bowl of the shredded coconut. Coat the shrimp and then place on top of a wire rack that has been coated with cooking spray and placed on top of a baking sheet.

Lightly spray the shrimp with cooking spray and place in the preheated oven for five minutes. After five minutes, remove from oven and carefully turn the shrimp, lightly spray the other side with cooking spray and place back into the oven for an additional four to five minutes. Remove from oven and let cool.

In the mean time cut your pineapple and mango into bite sized pieces and grill either using a grill pan or directly on a grill. Grill for 1-2 minutes on one side, turn and grill for an additional 1-2 minutes on the other side. Remove from grill and set aside until the shrimp are ready.

Now all you need to do is assemble your tropical shrimp bites… I used a bamboo skewer and added one piece of grilled pineapple, a shrimp and finally a bite of mango. Your perfect tropical bite!

It’s amazing how much flavor the shrimp takes on from the vinaigrette in such a short time. You can really taste the mango with a little hint of the chipotle, it’s tasty!! Your guest are going to love this little bite from the tropics! This recipe will make roughly 40 tropical shrimp bites, perfect for a medium sized gathering. You can adjust accordingly to the size of your gathering. I served my shrimp bites on top of some sugar pea greens that had been lightly dressed with the Hidden Valley@ Farmhouse Originals Mango Chipotle Vinaigrette as well. That made for some added flavor along with a very pretty presentation.

Easy Eggplant Parmesan Stacks

One of my favorite meal memories was when my dad went out of town (he’s not a huge fan of eggplant) and my Mom took the opportunity to make Eggplant Parmesan for the first time. I was in my early teens and boy, oh boy… My mind was blown. I had grown up eating pasta, namely spaghetti like most kiddos, but when my mom paired our favorite Ragú® sauce with the lovely breaded eggplant I thought I had gone to heaven. Recently, the folks at Ragú® came to me and asked if I could jazz up the classic eggplant parmesan recipe, I was thrilled! I was for sure up for this challenge.

I decided to make a healthier version of this tasty meat free dinner. I oven “fried” my eggplant and then stack it with layers of Ragú® Old World Style® Traditional Sauce and fresh mozzarella Cheese. With 11 tomatoes in every jar, Ragú® Old World Style® Traditional Sauce is Ragú® richest, thickest recipe* ever and it’s PERFECT with this recipe!

Easy Eggplant Parmesan Stacks

2 large eggplants

salt & pepper

4 eggs

4 cups unseasoned Panko bread crumbs

cooking spray

24 oz jar of Ragú® Old World Style® Traditional Sauce

2 cups mozzarella cheese

1 cup parmesan cheese

Wash and cut eggplant into 1/2 inch slices.

Place on a baking sheet and generously salt both sides. Let sit for 15 minutes.

This will draw out some excess moisture. After 15 minutes wipe the water and salt off the eggplant slices with a paper towel and set aside.

Meanwhile, set-up a dredging station to prepare the eggplant to oven “fry.” In one bowl crack 4 eggs and whisk. The 2nd bowl will be for the Panko bread crumbs.

Take each eggplant slice and lightly cover with salt and pepper, then cover both sides with the egg wash and then place in the Panko bread crumb bowl, generously covering both sides. Place on a cooling rack on a baking sheet.

Spray the eggplant generously with cooking spray and place in a 425˚ oven for 8 minutes. Remove from oven and turn over each eggplant slice. Spray the eggplant one more time with cooking spray and return to oven for an additional 8-10 minutes. Remove from oven and let cool for a few minutes.

Here’s the fun part. Cover a baking sheet with parchment paper. Now you are going to create towers of eggplant. Lay down a large slice of eggplant. Add a spoonful of Ragú® Old World Style® Traditional Sauce and a slice of mozzarella.

Top that with another slice of eggplant and repeat the process until you have about 5 or 6 layers.

Top with a generous layer of parmesan cheese. Place in a 350˚ oven for 10-15 minutes or until the cheese has melted.

Remove from oven and let cool for a few minutes. Serve warm.
