Scrumptious Homemade Chocolate Pudding Recipe

Buttery Homemade Chocolate Pudding from WhipperBerry

As a child my favorite thing on the planet was chocolate pudding. If you wanted to find your way into my heart all you needed to do was gift me a chocolate pudding cup and we were best friends. Even better were those long since forgotten pudding pops, but we’ll save that for another day. My entire childhood I thought the only way to make pudding was to either buy it in cup from the dairy section of the market OR… Make your own from the pudding powder you found in the baking section of the market. My mind was blown when my Mom made homemade chocolate pudding the first time. It was so much better than the store bought options. Who knew it was so easy to make AND… That it tasted so good.

I’ve made homemade pudding for awhile now and I’ve been playing around with other ingredients to give it even more deep flavor than the traditional recipe. I headed off to Target to go on a hunt for other options for my homemade chocolate pudding craving. I ended up at the creamer section and started to think, this might be the perfect option.

target

Check out all of the fun options… So Delicious Dairy Free Coconut Milk Creamer would make a fun pudding and we love coconut at our house. The Silk Almond Creamer is another great option. The one that really caught my eye was the new  Horizon Organic Half & Half that has that lovely buttercream flavor! Doesn’t that sound awesome? Chocolate pudding with a hint of butter flavor… Yum! Either way, Target has so many fabulous choices in creamers. Dairy, non-dairy, flavored or not flavored they have all kinds to choose from. They are great to start your day in your hot chocolate or coffee and they are fantastic to play around with for sweet treats like my chocolate pudding. Want a sweet deal? If you download the Target Cartwheel App you can use Cartwheel and the 20% off Cartwheel offer on International Delight Simply Pure, Horizon, Silk and So Delicious creamers from 9/25/2016 – 10/22/2016!

After a little playing around, here is the recipe that the whole family LOVED!

This homemade chocolate pudding paired with some made from scratch whipped cream will knock your guests socks off!
Author: Heather // WhipperBerry
Recipe type: Dessert
Serves: 4 servings
Ingredients
  • 1 cup whole milk
  • 1 cup Horizon Organic Buttercream Half & Half
  • ¼ cup sugar
  • ⅓ cup cocoa powder
  • 4 teaspoons corn starch
  • 3 egg yolks
  • 2 teaspoonsvanilla
  • ¼ teaspoon salt
Instructions
  1. Put 1 cup of the milk, ½ cup of the half & half, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat. Make sure it doesn't boil. You are basically wanting to dissolve the sugar and cocoa powder into the milk and half & half mixture.
  2. Whisk the remaining ½ cup of the milk, cornstarch, salt, egg yolks, and vanilla in a bowl.
  3. Talk a half a cup of the warm milk mixture and whisk it into the egg mixture to temper the eggs. If you were to mix it without tempering, that would scramble your eggs.
  4. Gradually whisk the rest of the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
  5. Pour the pudding into 6 small cups. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight until set.
  6. Serve with whipped cream and chocolate shavings.

Green Chili and Salsa Egg Muffins Recipe

10 · Sep 20, 2016 · 3 Comments

Always on the run in the morning? YEP, us too! Here’s how I figured out how to make a scrumptious egg muffins recipe for on-the-go!

Green Chili and Salsa Egg Muffins... Perfect for on the go from WhipperBerry

Call me crazy, but I’m not always up for sweets in the morning. I’m one of those people that do really well with some scrambled egg or something like that in the morning. Sadly, we don’t always have time to bust out a pan, whip up some eggs and scramble them before work and school. We needed a take-an-go option for eggs. I thought and egg muffins (minus the Mc) would be a great way to take scrambled eggs on the go. The bonus, you can make them days ahead and either refrigerate or freeze them.

They literally take just minutes to whip-up, then you bake them in the oven. Let them cool and I wrap them in wax paper or store them in an airtight container. When you’re ready to eat them, pop them in the microwave for 30-40 seconds and you have a GREAT breakfast on-the-go!

Vanilla Macchiato Glaze Recipe from whipperBerry

One of the best parts of Fall is the ushering in of the baking season! You know what I’m talking about… Summer has been so hot, too hot to turn on the oven. Plus, we’ve been enjoying the fruits of the season, YUM! Now it’s time to turn our attention to the love of all things pumpkin & spice that goes so well with my new Vanilla Macchiato Glaze that I’m sharing today.

But, before I do that that, here are a few of my favorite fall pumpkin recipes from over the years here on WhipperBerry to get the fall baking ideas flowing. Some of these recipes will go great with this new Vanilla Macchiato Glaze…

5 Pumpkin Recipe Ideas

Now the reason I came up with this was a silly little mix-up in my schedule. I FORGOT that I needed to bring treats to a gathering of friends and I needed something quick!

I know you’ve been there at one time or another. I’m never adverse to bringing something store-bought to a gathering, I just have to dress it up a bit to make it “look” homemade. That is exactly what I did that afternoon. I ran to the store and bought some cinnamon coffee cake muffins and brought them home to dress them up. I thought they would look good if I put them into some fancier wrappers and then topped them off with a little glaze. I looked into my refrigerator and found some International Delight Vanilla Macchiato Creamer and thought it would make a lovely glaze.

Yep, it’s as easy as that. Using the creamer rather than milk adds that lovely flavor from the creamer to your glaze. It’s extra special! I just drizzled the glaze over the store-bought muffins and voila, I have a great treat that looks homemade! Shhhh, no one needs to know your secret.

9 Great Printable Drink Notes for Back-To-School

10 · Sep 7, 2016 · 1 Comment

I’ve partnered with Huhtamaki Inc. for the Chinet® brand to create this post! Enjoy!

Free Printable drink notes created for @mychinet from WhipperBerry... A great way to send the kiddos off to school each morning! @AOL_Lifestyle #ad

I don’t know about you, but I’m always looking for ways to help my kiddos feel extra special. Especially now that they have gone back to school, and the daily grind is starting to get to them a bit. The magic of summer is over, and they need a little pick me up in the mornings.

I’ve always been a fan of the good printable ol’ lunchbox note, but I thought it would be fun to change things up a bit and create some morning drink notes that you can wrap around a Comfort Cup® by Chinet® cup for a little boost at the beginning of the day!

We aren’t coffee drinkers at our house, but we LOVE hot chocolate, Choffy, flavored milk steamers, herbal tea… all kinds of tasty treats. The Comfort Cup® by Chinet® insulated hot cup is perfect for keeping your hot drink hot, and it’s specially designed to keep your hands comfortable with a special three layer system that keeps the cup insulated.

They aren’t just for hot drinks either! They’re perfect for taking your colds drinks on-the-go as well. My kiddos are always wanting to take drinks with them to school or other activities, and I’m always getting frustrated with them leaving their drink containers places. The amount of drink containers that they’ve left for the universe makes my head spin. When I use the Comfort Cup® by Chinet® insulated hot cups I know I won’t have to worry about that. Plus, who doesn’t love to walk around with a cute cup while on the way to school or other activities?

You pair them with my fun printable drink sleeves with a cute little note, your kiddos are going to adore them! I’ve created a set for the younger, elementary age kiddos and then a couple that the teenagers might like (well, teen girls anyway. The boys maybe not so much.)

Wrap them around your Comfort Cup® by Chinet® insulated hot cups, and affix with tape or glue dots. It’s that simple.
