My earliest food memories are of tomatoes…

No joke! One of my earliest memories is picking a tomato from the vine out of my Dad’s garden. I was two and a half or three and sat down and ate those scrumptious tomatoes right then and there. I remember the smell that fills the air when you pull the tomato from the vine. It’s earthy with a hint of grass and a promise of good things to come. I remember, even as a three year old, eating that tomato that was still warm from the heat of the day… magical!

From that point forward I wanted tomato on EVERYTHING!

I remember refusing to eat tacos one night because my Mom had forgotten to get tomatoes from the store. Yep, I would rather go without the taco if it was missing my favorite tomatoes. I was six or seven at the time, but I still have the same feelings as an adult… I just have to act like an adult and not throw a fit.

Tomatoes are truly one of my favorite foods.

Because of that, I was thrilled to find out about Bushel Boy Tomatoes™ grown right here in the USA, in Minnesota to be exact.

The crew at Bushel Boy has developed a fabulous greenhouse system that helps them grow tomatoes year-round. Yep, even in January they have beautiful red, vine ripened tomatoes ready for us to add to our salads and sandwiches.

The Bushel Boy Tomatoes are pollinated with bees… the natural way. They also limit the amount of pesticides used and have eliminated herbicides all together. They have worked really hard to create a tomato that takes me back to those magical days in my Dad’s garden.

One of my Dad’s favorite sandwiches of all time is the classic BLT… Bacon, Lettuce & Tomato. Being a tomato lover myself, it’s one of my favorites too. A few years ago my husband and I were at a restaurant and we were introduced to tomato jam. When I read about it on the menu my mind was blown and I couldn’t wait to make my own.

Tomato Jam is both savory and sweet at the same time. It cooks down those flavorful tomatoes into a virtual tomato bomb that really enhances all kinds of sandwiches or appetizers.

You know when you’ve eaten something transcending at a restaurant and wished that you could duplicate that kind of flavor at home, that is what tomato jam does. It takes your normal BLT and kicks it up SEVERAL notches.

The best part… It’s SUPER EASY to make!

This recipe is inspired by Mark Bittman’s Tomato Jam recipe. Tomato Jam is perfect for a high end BLT appetizer OR just your everyday BLT sandwich that we all love. I’ll show you how to make both.

Tomato Jam is perfect to add a little kick to your sandwiches & appetizers.

Serves: 1 pint
Ingredients
  • 1½ lbs. Bushel Boy Tomatoes
  • 2-3 tablespoons rice wine vinegar
  • 1 small red onion
  • ½ cup sugar
  • 1 teaspoon salt
  • 4 cloves
  • 1 teaspoon cumin
  • ¼ teaspoon ginger
  • ¼ teaspoon cinnamon
  • ½ teaspoon red pepper flakes
Instructions
  1. Wash tomatoes
  2. Cut in quarters and remove seeds then give them a rough chop.
  3. Add to a medium, heavy bottom sauce pot and place over high heat.
  4. Add remaining ingredients and let tomatoes come to a boil.
  5. Reduce heat to medium-low and let simmer, stirring occasionally for 1 hour and 15 minutes or until it's nice and thick like jam. You should be able to run a spoon down the center of the pot and the jam will stay in place.
  6. Remove from heat and let cool.
  7. Place in a jar, refrigerate for up to one week.

First, wash and prep your tomatoes.

Cut tomatoes in quarter and remove the seeds.

 Give them a rough chop.

 Add the rest of your ingredients and place over high heat until it comes to a boil, then reduce to medium-low to simmer for 1 hour and 15 minutes stirring occasionally.

 Remove from the heat when your tomatoes have cooked down to a jam consistency.

Summer is almost HERE! Time to starting thinking about all of those lovely summer flavors.

One of my favorite flavor combinations which just screams summer to me is the classic Peach Melba pairing…

Peach, Raspberry & Vanilla Ice Cream

There is nothing better than a juicy summer sweet peach drizzled with raspberry sauce over a bowl of vanilla ice cream. My Mom first introduced this dream dessert to us one summer when I was a kid and I’ve been hooked every since.

I was thinking the other day about those magical flavors and I thought it would make an amazing Italian Soda!

What is Italian Soda you ask?

Well it’s basically sparkling water and some type of flavored simple syrup added with a splash of cream, YUM!!

 It’s a fantastic summer dessert drink for sure. Here is what you’ll need to make a round of your own.

Peach Melba Italian Soda Recipe

2 cans Sparkling Water – I use berry flavored La Croix

2 tablespoons Peach Torani syrup

2 teaspoons Raspberry Torani syrup

4 tablespoons International Delight Cold Stone Creamery™ Sweet Cream

Raspberries for garnish

I like to start with a nice cold glass from the freezer…

 Add some ice and a few raspberries…

 Add 1 tablespoon of peach syrup & 1 teaspoon of raspberry syrup  to each glass…

 Pour in your sparkling water…

 Top with roughly 2 tablespoons each of the yummy International Delight Cold Stone Creamery™ Sweet Cream for that little kick of sweet vanilla to take this treat over the top!

 Garnish on top with a few more raspberries and you’re all set.

How fun is that?!

It’s crazy to think that I have been a Mom for 18 years now… gulp! Now that my girls are a little older it’s so fun to work on projects together.

I have been wanting to create some type of sign to remind our whole family to stop, take a step back and ENJOY THE RIDE.

Sometime our lives get so crazy, especially now that the kiddos are getting older and have crazy schedules themselves, we forget to find joy in the moment. The girls and I decided we wanted to create a marquee sign to put on our shelves in our kitchen to give us that simple reminder everyday.

If you know me, you know I have a love of marquee letters. I started out making my own, you can find that post HERE. Then my fabulous friend Heidi Swapp…

It was so fun to work together with the girls to create this new masterpiece. With Heidi’s washi tape & paper, it’s super easy to add a little flair to the letters. Talk about an aaaamazing Mother’s Day gift!

A handmade gift from your kiddos is always fantastic no matter how simple it is. It really starts to get fun when you can work together with your kiddos to create a project together. We LOVED it!

It is seriously one of our family’s favorite breakfasts these days. The crazy thing is, I thought for sure my kiddos would want nothing to do with those “alien” chia seeds (they’re kind of picky) but they love this stuff!

The fun thing is that the Chia Pudding is like a blank canvas that you can top with all kinds of fun toppers. We’ve tried a number of concoctions since we first discovered this treat. We started with a standard Chia Pudding topped with berries and granola with drizzle of honey… super yummy!

Now we’ve stepped it up a notch and we are making Chia Pudding layered with pomegranate seeds, an ancient grains mixture and pumpkin seeds… simply LOVELY!

See, isn’t that simple. Now all you have to do is let it sit over night so the magic can happen.
The next morning, all you have to do is top with your favorite toppings. Today we are going to layer our pudding with pomegranate seeds, an ancient grain mixture that I just love with a few pumpkin seeds. You can pick what ever goodie you want!
So think about that… You’re adding even more nutrition with your toppings as well. This is a power house house breakfast in the super food category. The funny thing is that it really is a treat. We tend to make if for dessert too, it really does feel that decadent.

Pomegranate Ancient Grain Chia Pudding Recipe // DAIRY-FREE

Ingredients
  • 2 cup Silk® Unsweetened Almond Milk
  • 2 cup Silk® Dairy-Free Yogurt Alternative - Any flavor you like, I used vanilla
  • 1 tsp vanilla extract
  • 1 tablespoon honey
  • ½ cup chia seeds
  • a pinch of salt
  • Pomegranate seeds
  • Ancient Grains or granola
  • pumpkin seeds
Instructions
  1. In a small mixing bowl or jar, add Silk® Almond Milk, Silk® Dairy-Free Yogurt Alternative, vanilla, honey, chia seeds and salt. Mix well.
  2. Cover pudding and place in the refrigerator for at least 4 hours or overnight.
