Easy Eggplant Parmesan Stacks

1 · Apr 1, 2014 ·

The post brought to you by Ragú® // I LOVE eggplant. One of my favorite meal memories was when my dad went out of town (he’s not a huge fan of eggplant) and my Mom took the opportunity to make Eggplant Parmesan for the first time. I was in my early teens and boy, oh boy… My mind was blown. I had grown up eating pasta, namely spaghetti like most kiddos, but when my mom paired our favorite Ragú® sauce with the lovely breaded eggplant I thought I had gone to heaven. Recently, the folks at Ragú® came to me and asked if I could jazz up the classic eggplant parmesan recipe, I was thrilled! I was for sure up for this challenge.

Eggplant-Parmesan-Stacks-9

I decided to make a healthier version of this tasty meat free dinner. I oven “fried” my eggplant and then stack it with layers of Ragú® Old World Style® Traditional Sauce and fresh mozzarella Cheese. With 11 tomatoes in every jar, Ragú® Old World Style® Traditional Sauce is Ragú® richest, thickest recipe* ever and it’s PERFECT with this recipe!

Easy Eggplant Parmesan Stacks

2 large eggplants

salt & pepper

4 eggs

4 cups unseasoned Panko bread crumbs

cooking spray

24 oz jar of Ragú® Old World Style® Traditional Sauce

2 cups mozzarella cheese

1 cup parmesan cheese

Wash and cut eggplant into 1/2 inch slices.

Place on a baking sheet and generously salt both sides. Let sit for 15 minutes.

This will draw out some excess moisture. After 15 minutes wipe the water and salt off the eggplant slices with a paper towel and set aside.

Meanwhile, set-up a dredging station to prepare the eggplant to oven “fry.” In one bowl crack 4 eggs and whisk. The 2nd bowl will be for the Panko bread crumbs.

Take each eggplant slice and lightly cover with salt and pepper, then cover both sides with the egg wash and then place in the Panko bread crumb bowl, generously covering both sides. Place on a cooling rack on a baking sheet.

Spray the eggplant generously with cooking spray and place in a 425˚ oven for 8 minutes. Remove from oven and turn over each eggplant slice. Spray the eggplant one more time with cooking spray and return to oven for an additional 8-10 minutes. Remove from oven and let cool for a few minutes.

Here’s the fun part. Cover a baking sheet with parchment paper. Now you are going to create towers of eggplant. Lay down a large slice of eggplant. Add a spoonful of Ragú® Old World Style® Traditional Sauce and a slice of mozzarella.

Top that with another slice of eggplant and repeat the process until you have about 5 or 6 layers.

Top with a generous layer of parmesan cheese. Place in a 350˚ oven for 10-15 minutes or until the cheese has melted.

Remove from oven and let cool for a few minutes. Serve warm.

Yields 9 servings

The Family is of God Flip Chart for LDS Primary

39 · Mar 28, 2014 · 22 Comments

The Family is of God Flip Chart // It’s almost April and for all of us LDS Primary choristers, it’s time to start teaching a new song for the month.  This month’s song is The Family is of God, and it’s so beautiful. I can’t wait to teach my kiddos. I’ve been playing it on my iPhone in the background for the last couple of week so that I could get the words down and I’ve just fallen in love.

I have put together a flip chart for the 1st verse for this week. I will have the other verses up soon as well. I can’t wait to share what I’ve been working on for the next couple of verses, I think the kiddos are going to like it.

With that said, here’s what the flip chart looks like. You will need to go here to DOWNLOAD the full sized flip chart for your own use.

Again, I used several illustration from Susan Fitch. Here talent is amazing and she is so incredible to share those all with us. You need to run over to her site and see all of her amazing work!

Please remember this flip chart is for personal or church use only.

Easter Buddies + An Easter Pinterest Party

// Easter Buddies with Free Printable //

Easter-Egg-Animals-with-free-printable-2

I have decided that when it comes to candy and all around cuteness… Easter is my favorite holiday.  I mean really, Cadbury Mini Eggs, Jelly Beans, Reese’s Peanut Butter Eggs, Cadbury Creme Eggs, black jelly beans, the list could go on and on. Not to mention all of the cute basket of Easter goodies that they have available at the stores these days.

I’m a sucker for fun plastic eggs and I found this CUTE set of animal Easter eggs at Target and thought it would be perfect little goodie for my kiddos. I could add a fun curled up message along with the candy inside, add some feet to the bottom of the plastic eggs and they turn them into something extra special…

Easter-Egg-Animals-with-free-printable-4

This project is super quick and with my free printable, you can make them up in a snap! Here’s what you will need…

Supply List

  • Animal Easter Eggs
  • card stock paper
  • Elmer’s Craft Bond Foam Mounting Shapes
  • scissors
  • printer paper
  • pencil
  • candy

Instructions

First,  you will need to print the free printable sayings on just your basic printer paper…

Easter-Buddy's-Printables-from-#whipperberry

You can download the printable HERE.

Once you have that printed, you will need to use scissors or a paper cutter to cut out the strips and then curl them around a pencil…

Easter-Egg-Animals-with-free-printable-6

Next cut out some small 1- 1 1/2 inch hearts to use as the feet for your little animal eggs…

Easter-Egg-Animals-with-free-printable-13

I used my Cricut Explore, but you could easily use any cutting machine or free hand it as well.  Then you will use your Elmer’s Craft Bond foam circles to affix the feet to the egg. These little foam adhesives are PERFECT for this project.

They have just the right amount of hold to keep those little buddies standing strait without hardly any fuss.  And just like that, you’re a rock star!

Add some Cadbury Mini Eggs and you’re really ROCKIN’!  There you have it, this simple yet super fun Easter Buddy project…
