Buttery Homemade Chocolate Pudding from WhipperBerry

As a child my favorite thing on the planet was chocolate pudding. If you wanted to find your way into my heart all you needed to do was gift me a chocolate pudding cup and we were best friends. Even better were those long since forgotten pudding pops, but we’ll save that for another day. My entire childhood I thought the only way to make pudding was to either buy it in cup from the dairy section of the market OR… Make your own from the pudding powder you found in the baking section of the market. My mind was blown when my Mom made homemade chocolate pudding the first time. It was so much better than the store bought options. Who knew it was so easy to make AND… That it tasted so good.

I’ve made homemade pudding for awhile now and I’ve been playing around with other ingredients to give it even more deep flavor than the traditional recipe. I headed off to Target to go on a hunt for other options for my homemade chocolate pudding craving. I ended up at the creamer section and started to think, this might be the perfect option.

Check out all of the fun options… So Delicious Dairy Free Coconut Milk Creamer would make a fun pudding and we love coconut at our house. The Silk Almond Creamer is another great option. The one that really caught my eye was the new  Horizon Organic Half & Half that has that lovely buttercream flavor! Doesn’t that sound awesome? Chocolate pudding with a hint of butter flavor… Yum! Homemade Chocolate Pudding Recipe

This homemade chocolate pudding paired with some made from scratch whipped cream will knock your guests socks off!

Serves: 4 servings
Ingredients
  • 1 cup whole milk
  • 1 cup Horizon Organic Buttercream Half & Half
  • ¼ cup sugar
  • ⅓ cup cocoa powder
  • 4 teaspoons corn starch
  • 3 egg yolks
  • 2 teaspoonsvanilla
  • ¼ teaspoon salt
Instructions
  1. Put 1 cup of the milk, ½ cup of the half & half, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat. Make sure it doesn't boil. You are basically wanting to dissolve the sugar and cocoa powder into the milk and half & half mixture.
  2. Whisk the remaining ½ cup of the milk, cornstarch, salt, egg yolks, and vanilla in a bowl.
  3. Talk a half a cup of the warm milk mixture and whisk it into the egg mixture to temper the eggs. If you were to mix it without tempering, that would scramble your eggs.
  4. Gradually whisk the rest of the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
  5. Pour the pudding into 6 small cups. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight until set.
  6. Serve with whipped cream and chocolate shavings.

 Now the reason I came up with this was a silly little mix-up in my schedule. I FORGOT that I needed to bring treats to a gathering of friends and I needed something quick!

I know you’ve been there at one time or another. I’m never adverse to bringing something store-bought to a gathering, I just have to dress it up a bit to make it “look” homemade. That is exactly what I did that afternoon. I ran to the store and bought some cinnamon coffee cake muffins and brought them home to dress them up. I thought they would look good if I put them into some fancier wrappers and then topped them off with a little glaze. I looked into my refrigerator and found some International Delight Vanilla Macchiato Creamer and thought it would make a lovely glaze.

  • 2 cups powdered sugar
  • ½ teaspoon salt
  • 3-4 tablespoonsInternational Delight Vanilla Macchiato Creamer
Instructions
  1. Pour the powdered sugar into a small bowl, add salt and then slowly add the creamer until you get the consistency you would like.

 Yep, it’s as easy as that. Using the creamer rather than milk adds that lovely flavor from the creamer to your glaze. It’s extra special! I just drizzled the glaze over the store-bought muffins and voila, I have a great treat that looks homemade! Shhhh, no one needs to know your secret.

Creamy Layered Berry Gelatin Dessert from WhipperBerry

I don’t know about you, but every time I see some fancy layered gelatin dessert I feel like a kid again!

There is just something about the magic of those suspended layers that brings a little magic back into life. I love making this kind of dessert for my kiddos and I hope when they grow-up they’ll feel the same way about this magical treat. One of my favorite ways to make it is to add creamer to a few layers with some unflavored gelatin. It adds this creamy layer that just makes the dessert POP!

I use International Delight Simply Pure for most of my gelatin desserts. It’s so perfect, I don’t need to add anything else to the mix. No added sugar or anything. Simply Pure is just right. Then for a surprise, I create a layer of blueberries in the middle with again, more unflavored gelatin mixed with white grape juice. The kiddos love it!

Creamy Berry Gelatin Dessert Recipe

Your family will love this layered gelatin dessert with a couple of fun surprises inside!

Serves: 6-8
Ingredients
  • 2 small box of berry flavored gelatin
  • 6 small packets of unflavored gelatin
  • 3 cups International Delight Vanilla Simply Pure
  • 1 cup white grape juice
  • 1 cup blueberries
  • water
  • ice cubes
  • whipped cream
  • cookies for garnish
Instructions
  1. Mix up the first berry flavored gelatin according to package directions. I use the ice method to speed up the gelling process.
  2. Pour into your clear serving containers and refrigerate until firm.
  3. Mix up two clear unflavored gelatin packets using ½ cup of hot water and then 1½ cups of Simply Pure.
  4. Pour on top of the berry gelatin layer. Place in the refrigerator until firm.
  5. Mix up two clear unflavored gelatin packets using ½ cup of hot water and then 1½ cups of cold white grape juice.
  6. Place a handful of blueberries on top of the cream layer and then pour the clear gelatin over the berries.
  7. Put back into the fridge until firm.
  8. Repeat the Simply Pure layer and refrigerate until firm.
  9. Repeat the berry gelatin layer and again refrigerate until firm.
  10. Once it's ready to serve, top with whipped cream, more blueberries and vanilla cookies as a garnish.

Grilled Pineapple Delight Boats - A tropical dessert from WhipperBerry

We’re a huge fan of pineapple at our house! That fresh tropical flavor is perfect with all kinds of dishes from savory to sweet. I especially LOVE to grill pineapple during the summer months. One night I was enjoying some grilled pineapple and started to dream up a fun new dessert that I just had to try. It’s a cross between a taco and a cheesecake. Yep, kind of crazy but once you try it… You’ll know it’s crazy awesome!!

I started with the base of the dessert by using our favorite Old El Paso Mini Taco Boats. It’s a perfect 2 bite dessert that’s perfect for a party. I coat the mini taco boats in cinnamon sugar and pop it in the oven for a few minutes. Then I fill them with a scrumptious cream cheese mixture that also involves marshmallow creme… Yep, now we’re talking! Top that with some grilled pineapple and you will be in heaven. Here’s how to make them.

Ingredients
  • 1 package of Old El Paso Mini Soft Tortilla Taco Boats
  • Cooking Spray
  • 3 tablespoons cinnamon sugar
  • 2- 8 oz. packages of cream cheese - room temperature
  • 2- 7 oz jars of marshmallow creme
  • ¼ cup sweetened condensed milk
  • 1 tsp. vanilla
  • 1 pineapple
  • 12 blackberries - optional
  • ⅛ cup of toasted unsweetened coconut - optional
Instructions
  1. Prepare Mini Taco Boats first by preheating the oven to 400˚ then place Mini Taco Boats on a parchment lined baking sheet and spray with cooking spray.
  2. Coat each of the Mini Taco Boats with cinnamon sugar.
  3. Place in the oven for 8-10 minutes until golden brown.
  4. While the Mini Taco Boats are cooling, place the cream cheese, marshmallow creme, sweetened condensed milk and vanilla into a large mixing bowl and mix starting on the lowest speed and gradually increase the speed until the ingredients are fully combined. If you aren’t using this right away, you’ll want to place in the refrigerator until ready to use.
  5. Cut pineapple into roughly 1 inch wedges about a ½ and inch thick. Grill on a grill pan for 1 minute on each side or until you see some grill marks appearing. Remove from grill and let cool completely.
  6. To assemble your dessert either spoon or pipe your filling into the Mini Taco Boats, top with a couple of slices of pineapple, a blackberry and garnish with toasted coconut.

Let’s face it… Mornings can be ROUGH! But, they don’t have to be.

I know that we are mid-summer at the moment, but I’m already starting to dread back-to-school. My kiddos start in early August, so we really only have a few more precious weeks of summer left.

Now is the time to perfect our morning routine so that as we transition back into school mode, we already have a good habit to start the year off right. We sat down and pow-wow’d and came up with some great breakfast ideas and some morning hack ideas that we think will help our family have fabulous mornings and maybe your family as well!

Morning Hack #1 Plan Ahead

Nothing tanks a day faster than not having a plan. We have found that a little planning ahead of time makes for smoother mornings. Happier kiddos and definitely a happier Mom. Plan outfits, pack backpacks & make lunches the night before.

Morning Hack #2 Keep a Well Stocked Pantry & Fridge

One of the keys to happy mornings at our house is having a well stocked pantry and fridge. Now that doesn’t mean we have an over abundance of food that goes to waste. We’ve figured out some key staples that can make several different recipes with just a few key ingredients.  All of the recipes I’m sharing today have been developed with the basic ingredients above.

Fruit, nuts, flat bread, rolled oats, milk, honey, cottage cheese, yogurt and Jif® Flavored Peanut Butter Spreads in Maple & Cinnamon. That’s it! With just those ingredients my kiddos and I can make several different types of breakfasts that they all love like our fruit pizza that my little guy adores!

  • Flat bread
  • 1-2 tablespoons of Jif® Cinnamon Flavored Peanut Butter Spread
  • Fruit - You select your family's favorite fruit
  • Honey drizzle - optional
Instructions
  1. Toast your flat bread to crisp it up a bit.
  2. Spread a generous layer of the Jif® Cinnamon Flavored Peanut Butter Spread onto the flat bread.
  3. Layer your favorite fruit on top of the peanut butter.
  4. Drizzle with honey and ENJOY!

Morning Hack #3 Be Flexible

Now, I know that my first suggestion is to plan ahead BUT… What if your pre-schooler wants ice cream for breakfast and won’t take no for an answer? Or your middle schooler refuses to go to school without the right kind of hair spray (yep, I did that to my Mom once. 1st day of 7th grade. I had run out of Aqua Net. Stellar Middle School moment! Sorry Mom!) Pre-schoolers, middle schoolers… Really all kiddos are classic for this, trust me, I know the pain!

The key here is to be flexible. Learn how to go with the flow… Your pre-schooler wants ice cream for breakfast? Make them a smoothie bowl and they won’t know what hit them!

Morning Hack #4 Take Time to Slow Down

Even during the summer things can be really hectic in the morning. Chores, playdates, swim lessons you name it… Mornings can typically be a rush. On the mornings that aren’t a rush, TAKE TIME TO SLOW DOWN. Saturday or Sundays can be perfect for this. Take time to slow down and make something that is extra special for the family. Take the time to sit and giggle together, get to know each other better. These are the mornings that we want to remember for years to come!

When we take the time to slow down, our family loves to eat pancakes. I’m not always jazzed about the lack of nutrition in traditional pancakes so I’ve upped my game and made some gluten-free, protein packed pancakes that my family loves!
