Not too long ago I started a trend at my house…

We’ve all fallen in LOVE with the Overnight Cashew Milk Oatmeal and have become quite obsessed.

Doesn’t it just sound sinful to have pudding for breakfast? With this “pudding” you don’t have to worry! I love it for a light dessert as well.

A Simple overnight breakfast treat!

Cuisine: Breakfast / Light Dessert
Serves: 1-2 servings
Ingredients
  • 1 cup Silk® Cashew Milk
  • 1 cup Silk® Dairy-Free Yogurt Alternative - Any flavor you like, I used vanilla
  • 1 tsp vanilla extract
  • 1 tablespoon honey
  • ¼ cup chia seeds
  • a pinch of salt
  • Garnish with dairy-free, gluten-free granola, fruit & a drizzle of honey
Instructions
  1. In a small mixing bowl or jar, add Silk® Cashew Milk, Silk® Dairy-Free Yogurt Alternative, vanilla, honey, chia seeds and salt. Mix well.
  2. Cover pudding and place in the refrigerator for at least 4 hours or overnight.
  3. Garnish with granola, fruit and a drizzle of honey.

We are huge fans of oatmeal here at our house. I think I have talked about it before…

There are days when I think my husband wishes he could eat oatmeal breakfast, lunch & dinner. It’s not that oatmeal is his only true love. He just loves the ease and health benefits from eating his oats.

I, on the other hand, need variety in my life and eating a bowl full of hot oats isn’t always my favorite way to start the day. That is until I discovered overnight oats!! Have you guys tried these before? They are so good! I love that you can eat them hot OR cold and add whatever you want to them.

How to make overnight oatmeal with Silk Cashew Milk

This process couldn’t be easier. The cool thing is, you can mix up several of these goodies on Sunday and you’re all set for the week.

Gather all of your ingredients

Basic plain Jane rolled oats

Silk Cashew Milk

Vanilla extract

Honey or Brown Sugar

OPTIONAL INGREDIENTS

Chia Seeds

Wheat Germ

Flax Seeds

Almonds

Cashews

Blueberries

Blackberries

Raspberries

You get the idea… Basically whatever you want!

Here’s how you assemble your oatmeal

In a jar, place 1/2 cup of old fashioned rolled oats.

Add any other ingredients like chia seeds, flax seeds, wheat germ and such. I generally add chia seeds and wheat germ.

Top with 1 tablespoon of honey or 1/2 teaspoon of brown sugar. Add some of your favorite berries. We love adding blueberries here at our house. We’ve experimented with frozen blueberries and they are not our favorite in this application. I would opt for fresh if you have some.

Don’t forget to add a splash of vanilla extract.

Pour in 3/4 cup of Silk Cashew Milk.

Place the lid on your jar or container and gently shake up your concoction.

Place in the refrigerator overnight or for at least 6 hours. Your oats will plump-up with all that Cashew Milk goodness and create this lovely treat!

The next morning, you have two choices… Do you want your oatmeal hot or cold?

I generally prefer cold, but my husband likes hot. If you like your’s  hot, take the lid off and place it in the microwave for roughly a minute.

You can either eat it right out of the jar or pour it into a bowl. We like to top ours with chopped almonds, pecans or cashews. Whatever we have on hand and then drizzle with some fresh local honey.

YEP, it’s TASTY!!

This isn’t your grandmother’s oatmeal… It’s sweet, creamy & nutty goodness in a bowl.  It’s like a special treat in the morning rather than another boring old bowl of oatmeal.

My daughter, Hannah has become the expert overnight oatmeal mixer for our family. Each evening she pulls out all of our jars and gets to work putting together our breakfast for the morning. It’s perfect! You don’t have to put any thought into it at all. You just grab your jar out of the fridge and you’re all set!

Ingredients
  • ½ cup old-fashioned rolled oats
  • ¾ cup Silk Cashew Milk
  • ¼ teaspoon vanilla extract
  • ½ teaspoon brown sugar OR 1 tablespoon honey
  • OPTIONAL

Instructions
  1. In a jar or plastic container with a lid, add your oats, cashew milk, vanilla and brown sugar OR honey.
  2. Add any additional optional ingredients like chia seeds or blueberries.
  3. Place the lid on your container and gently shake.
  4. Place jar in the refrigerator overnight or for at least 6 hours.
  5. Remove from refrigerator and top with nuts and drizzle with honey. Serve COLD.
  6. If you would like oatmeal HOT, place in the microwave for roughly a minute and then top with nuts and drizzle with honey.

Nana Nog // Almond Banana Shake Recipe

When I was a kid, one of my favorite treats was a banana shake that my Mom would make every once in  a while, we called it a Nana Nog.

No relation to Egg Nog, plus you can drink it year-round!

It was a simple mixture, but it was always so heavenly.  She would always pull it out of her hat, right at the perfect time.

You know, that moment when you’re craving a little sweet refreshing treat?!

Secretly I’m sure, she made them right when the bananas were heading south and she didn’t have time to make banana bread.

I however, would like to think she was so in tune with my every desire and knew just when the time was right to pull out her famous Nana Nog!

The name of the drink has a two fold meaning now. Of course it was originally named after the key ingredient, bananas. Now, since we call my Mom Nana, the drink is named after her the creator! It’s perfect!!

We have another drink called Magical Monkey Milk, I’ll have to share that sometime too! It’s yummy!!

Nana Nogs are simply a mixture of Silk Almond Milk, bananas, ice, a little bit of sugar and a dash of nutmeg. Boy I tell ya, it really hits the spot sometimes! I choose to use Almond Milk rather than traditional milk for several reasons. First, it’s obviously dairy-free so even friends with dairy issues can have this sweet treat. Nana Nog Recipe

 2 ripe bananas

2 cups of Silk Vanilla Sweetened Almond Milk

1 cup of ice

1/4  teaspoon of sugar

a pinch of nutmeg

Really truly, your bananas should look more like this…

In the jar of your blender, add all of your ingredients.

This makes roughly three to four child size servings. Perfect to share with some friends.

Orange Honey Butter Spread with Melt Organic

This is one of my favorite culinary times of year… Citrus Season! I don’t know about you, but I love the oranges this time of year. They are like candy and I just can’t get enough of them. Which is probably good since we all seem to be fighting the cold and flu war this time of year, a little extra vitamin C is perfect! I thought a lovely Orange Honey Butter would be a great addition to a brunch table, especially when looking for inspiration from Bee Inspired recipes.

Recently, I was invited to try a new product out on the market called Melt® Organic. It’s this really cool “butter like” spread that has all the stuff we love about butter, but it’s packed full of healthier fats and it’s dairy and soy free. I would have to say I was a little skeptical at first. Can this product made out of a blend of  organic coconut, flaxseed, canola, palm fruit & sunflower oils really have the taste and creamy texture of butter? I decided to put it to the test.

First test, compound butter… Last Christmas, for my neighbor gifts, I made some lovely compound butters. I whipped together some honey, garlic & berry butters, packaged them up and gave them to my friends and neighbors for holiday gifts. They were a hit.

I wanted to give this idea a go with this new Melt® Organic product. I whipped it up the very same way, I place roughly 6 oz. basically half a container of Melt® Organic into my mixer with roughly 1 heaping tablespoon of orange marmalade.

Then whip the two together really well. Place in a small jar and serve immediately or store in the refrigerator and use as needed. It turned out beautifully!

I whipped up some black cherry butter spread with the other half of my container and I was all set for a lovely brunch.

I noticed a difference knowing that even though cookies aren’t exactly health food, and fat is still fat, I felt better knowing that the cookies they were eating were made from healthier fats. You can grab this recipe HERE, just substitute the Melt® Organic for the butter.

The next test… I sautéd some corn with Melt® Organic and I really liked that much better than butter. You still have the butter flavor without all the yucky fats. My family loved this test too.
