 Nothing is more grand than French Toast for breakfast… Am I right?

What’s even better is when you only need 5 ingredients AND you can make it the night before, pop it in the oven in the morning and voilá, a scrumptious breakfast is served!

That is exactly what you get when you make my simple overnight French toast. It’s easy to whip-up and the entire family will love it. My secret, I use International Delight Vanilla Simply Pure Creamer. It’s made with real milk, vanilla & sugar, that’s it. It’s simple and pure, just like its name. The great thing about using  Simply Pure for this recipe, is that I can eliminate 2 ingredients from my typical ingredient list. Simply pure already has the sugar and vanilla, it’s perfect! Here’s what you will need…

Simply Pure overnight French Toast from WhipperBerry

Bread (preferably day old), eggs, salt, berries (optional) & Simply Pure vanilla. That’s it! For you campers out there, this will be a prefect way to easily travel with your ingredients and then bake in a dutch oven. Here’s how you make it…

Seriously, easy as that! My family went nuts when I served this the other night for dinner along side some scrambled eggs. They’ve added it to their must have often list. What’s fun is that it’s a perfect meal to make with your kiddos.  And really truly, you don’t have to wait overnight for this gem of a meal to appear on your plate. You can whip it up and let it sit for about 20 minutes and it will be just as scrumptious BUT, you can make it the night before and cut down on morning prep time. It’s great for when you have company in town.

This easy French toast casserole is a fantastic make ahead meal for those busy mornings. Your family and friends with love it!

Serves: 6-8
Ingredients
  • 1 loaf of bread (day old if possible)
  • 6 eggs
  • 16 oz. of Simply Pure Vanilla Creamer
  • ½ teaspoon salt
  • 1½ cups of berries - fresh or frozen
Instructions
  1. Cut bread into bit-sized cubes.
  2. If your bread is fresh, place on a baking sheet and bake for 10 minutes at 350˚ to dry it out a bit.
  3. In a medium bowl, add the eggs, creamer and salt and whisk.
  4. In a small baking dish roughly 8x8, spray with cooking spray then add your bread, berries and top with egg and cream mixture.
  5. If you are baking right away make sure everything is submerged in the egg mixture, let sit for 20-30 minutes.
  6. If you are baking later, cover with foil and place in the refrigerator until ready to bake.
  7. Preheat the oven to 350˚
  8. Place casserole into the oven and bake for 40-50 or until set and lightly browned.
  9. Let cool for a few minutes then serve with fresh berries. It's sweet & moist enough that you don't even need syrup!

One of the first things that I think of when it comes to summer cooking is my favorite TOMATO!

 I think I’ve said this before, but I LOVE tomatoes!

A few weeks ago, I shared a lovely Tomato Jam recipe that is perfect for those BLT’s, burgers, wraps… Pretty much anything that you want to add a little kick of tomato to.

The key is getting really good tomatoes!

Because of that, I was thrilled to find out about Bushel Boy Tomatoes™ grown right here in the USA, in Minnesota to be exact.

The crew at Bushel Boy has developed a fabulous greenhouse system that helps them grow tomatoes year-round. Yep, even in January they have beautiful red, vine ripened tomatoes ready for us to add to our salads and sandwiches. I don’t know about you, but a nice good tomato in January is pretty awesome!

The Bushel Boy Tomatoes are pollinated with bees… the natural way. They also limit the amount of pesticides used and have eliminated herbicides all together. You can find all kinds of tasty ideas at the Bushel Boy Facebook.

Today, I’m sharing a fantastic Tomato Tart that is perfect for a light lunch or dinner. Paired with a nice garden salad, it’s the perfect summer meal!

 You can make them as individual tarts or make one large tart for everyone to share.

This scrumptious tomato tart is the perfect light summer meal!

Recipe type: Light Meal
Serves: 4 servings
Ingredients
  • 2-3 Bushel Boy Tomatoes
  • 1 store bought pie crust
  • 1 egg
  • 1 cup ricotta cheese
  • 1 cup chive cream cheese
  • ½ cup shredded parmesan cheese
  • salt & pepper
  • chives
Instructions
  1. Preheat oven to 450˚
  2. Line your tart pan or baking pan with the pie crust, gently press down on the top of the pan to remove excess dough.
  3. Pierce the the dough with a fork and place in a 450˚ oven for 8 minutes.
  4. Remove tart shell from the oven and let cool for a few minutes.
  5. In a medium bowl, whisk the egg then combine the ricotta cheese, chive cream cheese, ½ of the parmesan cheese, salt & pepper.
  6. Fill tart or tarts with the cheese mixture.
  7. Top the tart or tarts with fresh sliced tomatoes.
  8. Season the tomatoes with salt & pepper and then top with parmesan cheese.
  9. Place in a 400˚ oven for 30 minutes for a large tart and 20 minutes for small tarts.
  10. Remove from oven and let cool for a few minutes, then serve with a nice garden salad.

It is seriously one of our family’s favorite breakfasts these days. The crazy thing is, I thought for sure my kiddos would want nothing to do with those “alien” chia seeds (they’re kind of picky) but they love this stuff!

The fun thing is that the Chia Pudding is like a blank canvas that you can top with all kinds of fun toppers. We’ve tried a number of concoctions since we first discovered this treat. We started with a standard Chia Pudding topped with berries and granola with drizzle of honey… super yummy!

See, isn’t that simple. Now all you have to do is let it sit over night so the magic can happen.
The next morning, all you have to do is top with your favorite toppings. Today we are going to layer our pudding with pomegranate seeds, an ancient grain mixture that I just love with a few pumpkin seeds. You can pick what ever goodie you want!
So think about that… You’re adding even more nutrition with your toppings as well. This is a power house house breakfast in the super food category. The funny thing is that it really is a treat. We tend to make if for dessert too, it really does feel that decadent.

Ingredients
  • 2 cup Silk® Unsweetened Almond Milk
  • 2 cup Silk® Dairy-Free Yogurt Alternative - Any flavor you like, I used vanilla
  • 1 tsp vanilla extract
  • 1 tablespoon honey

Instructions

My sisters and I would stay up all night on Christmas Eve…

Well we would try to anyway. The anticipation for Christmas morning just a few hours away was almost too much to handle. What would Santa bring us?  Would he bring us that magical toy that we had been dreaming of for months? How big would the pile of presents be under the tree? What would I be able to show-off when school came back into session in a week or so? What was Mom & Dad going to make for Christmas morning breakfast?

Yep, the 2nd most magical thing about Christmas morning is our Christmas breakfast that has been a tradition for years in our house. It all started with my Dad who is a waffle aficionado. This man can make a mean waffle & his pancakes are pretty amazing as well. One year he decided to come up with the most decadent Christmas breakfast and he hit it out of the park. He would make Belgium waffles topped with strawberries, vanilla ice cream & fresh whipped cream…. Yum!

Now when it comes to breakfast in our house my parents are a matched set. My dad excels in the waffle/pancake arena, while my mother has the savory options locked and loaded. She of course had to come up with a savory companion that could stand-up to this over the top sweet Christmas treat. She discovered a recipe for Cheddar Breakfast Sausages that fit the criteria perfectly!

Together these two savory and sweet treats made Christmas morning for our family almost as exciting as discovering what Santa had brought us for the holiday!

The tradition has followed me as I became a Mother and married a waffle loving man as well. Together we too are a matched set. Mike makes our waffles, the very same ones my Dad used to make when I was young and I handle the savory treat that my Mom used to make, her Cheddar Breakfast Sausages.

To be completely honest, and I mean no disrespect to the waffle loving men in my life… I look forward to the Cheddar Breakfast Sausages more than I look forward to the waffles. I LOVE them!

The other day my little guy and I headed off to Wal-Mart to grab our supplies so that we could make some Cheddar Breakfast Sausages to share with you, maybe this savory treat will make it into your Christmas morning line-up as well.

Of course we had to start with our favorite Jimmy Dean® Premium Pork Sausage!

They are super easy to make, and the really nice thing is… They freeze beautifully! You can make these days or weeks in advance when you have a few extra minutes in the middle of the holiday rush and you’ll be all-set for Christmas morning!

Here is what you’ll need…

2 lbs. Jimmy Dean® Premium Pork Sausage Regular

16 oz. shredded sharp cheddar cheese

1 1/2 cups all-purpose baking mix

1/2 cup finely chopped onion

1/2 cup finely chopped celery

1/2 teaspoon garlic powder

 Preheat oven to 375˚

In a large bowl combine sausage, shredded cheese, baking mix, onion, celery and garlic powder. Using clean hands mix ingredients just until fully combined

Shape into 1 oz. balls and place on a parchment lined baking sheet.

Bake for 15 minutes or until the sausages reach an internal temperature of 160˚

Makes roughly 36 servings.

It really is just that easy and the fact that you can make it ahead of time, it’s a brilliant Christmas morning addition!
